Do you have a recipe for your bread, or do you just freestyle it? I’d love to have it if you do. I’ve got 10# wheat berries and 5# spelt berries at home to use up.

I use the bread machine recipe for whole wheat bread with my home-milled flour. I use Walton’s 8 grain mix to mill.

I go a bit heavy on molasses and substitute walnut oil for butter. If the bread is too dense for you, try adding 1/3 of regular white flour instead of all whole grain.

I use the dark setting for baking.

I have mixed in fruit, e.g., raisins and tried various nut oils instead of butter.

Just experiment and see what works for you.

By mixing in oats and barley you can make a super healthy whole grain bread that is low glycemic index and lowers cholesterol. A big slice is a meal.

This is the kind of approach that yield healthy food at very low cost, and the bread machine makes it easy.
