If we can get a decent garden together I’d really like to dehyrdate veggies. A lot easier than canning and I loathe canned veggies. Fruit’s okay though, if home canned.

I use a mandolin or food frocessor which ever works the best for what I want and it makes quick work of most veggies and fruits.On apples I bought an old fashioned apple pealer that cores and slices so all you need to do with that is a cut down the center and load the trays.My hubby usually helps because he thinks it’s fun *rolleyes* and I’ll take all of the help I can get.I use it now for things on sale...for example I bought about 30# of asparagus back in the spring when it was offered for .98¢ a pound, washed,trimmed the stalks, and loaded the trays.Now I have all the asparagus I ever want for use during the winter and all it takes is a soak in boiling water and then into the recipe.Saves me a lot of money,I know what is in it, and someday may keep us alive if worse came to worst.
