What’s today’s recipe? I had some lovely eggplant for lunch.
Choose a firm fruit, and wash it thoroughly. Cube into 1” sections. Place in a plastic bag with about a quarter cup of fresh, extra-virgin olive oil and shake until the oil is absorbed. Salt and pepper to taste. Bake in a single layer on a parchment-lined cookie sheet at 350° for forty minutes.
