I really like huevos rancheros...esp w/ really hot green sauce and refried beans, whats not to like. I lived in S NM for a time too and became addicted to that style of food. Then theres green enchiladas w/ rice and beans and... Well you see what I mean. :D Your turn...
I don't cook it...I go out to eat Texmex...but today I had flour tortilas (sp), sausage, eggs, cheeze and picante sauce so I made up a dish and it really was good.
