This sounds like a cake they call “Happy Cake” in Hawaii. Sell it from a stand up near Hickham, IIRC.

Actually, I've never heard of Hummingbird Cake before today.....
However, I do have a great recipe for Hummingbird Pot Pie....
(It's a lot like Chicken Pot Pie but a lot smaller)
