For real? If I can truly turn off MS spyware and control updates on my own time, might consider 10.

My understanding is that you can control the update process if you have the Pro version, but not with the Home Edition version. "Spyware" is a loose term. I don't use Cortana, I'm not into talking to the computer and having all of that info logged at MS. Another issue with Windows 10 is telemetry. Supposedly it is for checking how the system is running and helping them upgrade its function. The interesting thing is that you can set the amount of data that is sent back, to three levels, "Basic", "Enhanced", and "Full" (recommended default). I use "Basic." At "Full", the computer spends a LOT of time mirroring machine behavior and sending it to MS. Very intrusive, and very compromising of performance.

Yes you can turn automatic updates off. I have them disabled on one of my machines as a test and unlike others have reported, I've yet to have an update forced onto that machine.

Now, what some people may not realize is that if they do a manual update, that update will automatically re-enable auto-updates by default. This may be why some report having updates "forced" onto their machines, if they've done a manual update and not re-disabled auto-updates again.

BTW: you have full control over which parts of the OS you allow telemetry for vs not. I have everything including location awareness turned off on all my machines. I've done packet captures and analysis of packets leaving my machines and can tell you that no, Microsoft is NOT spying on me and no, my machine is not "leaking" data back to Microsoft without my express permission.

The trick with securing Microsoft is the same as with Linux: Don't install & enable the components you don't need and won't use.
