If I were completely innocent of any real wrongdoing, not only wouldn't I cut a plea on anything, I'd be screaming to be put on the witness stand in my own defense. And I suspect most people falsely accused of a crime would feel the exact same way.

You are delusional and have no experience with how the court system works. If you were facing a felony for tax evasion and looking a few years jail, you would singing a much different tune with a lesser charge on the table and probation.

I think you're pretty naive to think that you would never consider pleading to a non-sexual misdemeanor to avoid the possibility of a felony sex crime conviction.
Let's list some of the things you'd avoid:
loss of voting rights
loss of gun rights
several years of quality time in a maximum security facility where sex offenders are at the bottom of the social structure (both literally and figuratively).
When you finally get out of prison you get to register as a sex offender every time you move
You get to put convicted felony sex offender on every job application you file (I'm sure they'll be really sympathetic to your claims of innocence)
