There is an extensive write up of his very public complaints about whomever ruined his recipe. So maybe it was Hublein or RJ Reynolds. He actually went to restaurant sites for “promotional” cameos of cooking, and physically cooked their recipe and on camera threw it in the garbage, then served his recipe to attendees. This got around quite a bit. KFC of today is terrible. Am not a cult fanatic but there are very live websites on the entire story, including the still available source of the herbs and spices in a single container you can buy. It has to be pressure cooked during frying as understand.

Crunch of the skin, not overbreaded, breading seasoned correctly and meat maybe even injected. Cajuns know how to do this, and they really know how to cook Cachon du Lait (piglets milk soaked and radiant cooked— whole festival down in LA. In Mansura, LA 100k people come!)

Many times 30 years ago when in Savannah. Get there early for the first seating with big lazy susan on rollers with the servings on it— seated in the round. And, everyone first in— there was a Blessing of the food being served, and those there. For a long time prior it was a true boarding house... rent a room and included meals. Quite a place.
Sweet tea understand... leads to sweet pee (an old test for diabetes, docs would touch and finger to the tongue. Yuck).
If one was “spilling sugar” early or even late diagnosiis for the old phrased “sugar diabetes” (insulin resistance was not known). Funny remembering olde doctors and their brilliant practical knowledge. The middle ages up to 1800s not so much, heh!
Chachere’s and other Cajun chefs— get around that in straight fryers. They do use peanut oil, and they inject the meat before the seasoned breading goes on. Inject their own marinade style recipes. Does not cover the chicken flavor if done right.

Good to hear, my Sister worked there as well for a year or so in the mid 70’s. I haven’t eaten there probably since. I’ll need to get back there again.
Yep, you could get a room and a Great meal. Since Mrs. Wilkes passed, I doubt that the boarding house will ever reopen, but, the food holds up. During Covid, they were doing “to go” out the back door.
Those folks just love to cook!
BUT, if you ever go to Beaufort, SC, go over the steel bridge to Lady’s Island. Q’s Chicken Shack is a small building (NOT a Shack) on the right. They give Mrs. Wilkes a GREAT run for their money.
