It is a “cured” meat, so if it’s decently sealed up, it could last quite a bit longer than 7 days. That used to be the case, now not so much it is mostly artificially flavored. People won't buy real smoked ham so it is pumped full of water fo make it more palatable. I really don't know how they currently process bacon but I doubt it involves a smoke house.
I can remember when you could buy real smoked ham in the store but it wasn't nearly so tasty as it is today.

Hanging around in the cold cellar for multiple years, just knock off the flies. They used to hang beef sides until they turned green just trimmed off the green then cooked and ate. We call it aged beef today.
I was a cook in the Navy and on 6 moth cruses I never ever threw out one slab of bacon. We always cooked bacon in the oven as well.

Impulse shopping or special requirement for some meal.
I miss the local pizza buffet in town. Still open but no buffet during Covidtimes.
They had a salad bar included and there was freshly made bacon as a topping. I’d get pizza with a side of bacon.

I break it up into sizes that I will most likely cook and freeze it in ziplock bags. That's what I do too... snack size ziplocks with two pieces of bacon in each bag, then those small bags put in a quart size ziplock.(after leaving our a few days work in the fridge)...

LOL, someone asked me how long you can keep red wine after its opened, my mom laughed and said “he has no idea”
I once had a roommate who drank some of my red wine, then put in the fridge so it wouldn't go bad. Major facepalm moment.

I partially cook it to just short of done (in the oven in foil —less mess) then drain in paper towels flat, roll it up and put in freezer in a freezer Ziploc if not used then. Always thewhole package. Take out what you need and slap it on the griddle to cook rest of way. Never throw out bacon. Neck, hubs would eat it if was green That’s how he rolls . lol
