Rb’s smoked cheese pro-tip:
On a very cold night light three charcoal brickets on one side of the grill and add a chunk of hickory.
Place a couple of blocks of your favorite hard cheese on a piece of Alum. foil on the opposite side of the grill.
Let it smoke for no more than two hours, flipping them over about halfway through the process.
Has to be a cold night. If the inside of the grill gets over 100 degrees the cheese starts melting.
I do it in my smoker. On cold nights the interior temp doesn’t even hit 50 degrees.

This article references the prosecution of a maple syrup company violating the *made in Vermont* label. I know the guy who did this. He bought a commodity of syrup in Rhode Island, bottled it, and sold it a *Vermont Maple syrup*. Turns out the syrup was cane sugar. Guy spent ten years in Federal prison. They/VT take these things *SERIOUSLY*.
