A big reason for going with the French snails rather than the larger African variety is that you know what they have been eating.

Not unless they are over cooked. Think of the texture as being like a slightly rubbery sea scallop, tender but with a bit of chew.

The shells are tough enuff so that the “stepper” could get cut, in bare feet.

We have snails in southern CA - my town, anyway.

I realize now I haven’t seen them for awhile, but I’ve crunched my share underfoot over 46 years worth! Yuk -

But if they carry a parasite then you would have to thoroughly cook them, no t to mention use gloves when handling, wouldn`t that then make them tough and rubbery? (and dangerous to even touch)

I'm not saying that it is a good idea to eat the African snails. I wouldn't eat one.

French snails, sure; just make sure they get a three day purge on corn meal.
