How are kids supposed to get interested in science? They get intersted with stuff that blows up, catches on fire, makes loud noises, or flies.
If that! Most of the time the teacher would just take it, throw it in the drawer with all the other contraband, and keep teaching the class.

My kid made a potato howitzer powered by compressed air. It shot a potato through a 3/4” sheet of plywood. He took it to school and shot it over 2 football fields with 5 degrees of elevation. He also calculated the expected velocity and trajectory.
The funny part was, at the exposition day, he had a video my wife shot of him blasting thru a piece of plywood in our driveway. It was a great video, as my wife had never used a video camera—it looked like the Blair Witch Project. There were leaves swirling around; the prep of the cannon and the air compressor charge... finally the shot. The Dads couldn’t take their eyes off the video.
Well, we don’t need kids to learn things that they may use to invent things anymore./sarc
If you posted that video online and the wrong person saw it you would probably be charged with some crime.
Well, that will never happen. It was at least 10 years ago, we used the schools super-8 camera, and returned it... I never got a copy of the video.
My kid made a trebuchet model in gifted class, works too. Guess that is too scawy for these nerds.

I built one of those with several students.
Then I probably shouldn't tell you what I am going to do in several weeks with the Fresnel lens off a projection TV.
Starting in 7th grade I took Metal Shop, every semester we would fill balloons with acetylene and oxygen and use toilet paper for a fuse and the Teacher and Students would explode a couple in the school outside the shop building. It was done as a Learning exercise so as to demonstrate the extreme importance of NEVER leaving your torch on.

It wasn’t built from anyone else’s plan.
It was a science project, more than a toy. The kids had built their own “toy” versions which were portable and fueled by something volatile, like CVS underarm spray deoderant.
The project had twin tanks made of 4” schedule 80 PVC, with parallel feeds into the barrel. Pressure build up was contained by a pair of lawn sprinkler solenoids, so there was full pressure all the way down the 8 foot barrel.
Fire the school board and the entire administration.
