An assumption that the universe was created using natural forces and natural laws is a productive one. Science profits from a philosophy of the universe as a rational and understandable place. You cite this, then want to throw the ‘baby’ of actual evidence based science, out with the ‘bathwater’ of an age scheme that you disagree with for reasons having nothing to do with actual evidence - and thus make the universe out to be an irrational and non-understandable place ‘because we weren't there’ and ‘you can't assume’ and ‘the constants might not be constant’.
Fine, but if we assume that they ARE, suddenly things make rational sense, the pieces of evidence all fit together, and we can make useful predictions and explanations and products.
But some would rather engage in apologetics and Fred Flintstone theology.
For clarity's sake, let me remind our readers that you're repeatedly speaking negatively of the cornerstone assertion of the American republic.
According to you, nothing good can come of such an assertion of self-evident truth. But, in fact, it created the most successful nation ever. And that includes success in the sciences and in the exponential expansion of human knowledge.

Seems like your conceding that the idea of “poof” Creation is unproductive, that leads to no further data or discovery.
I prefer a rational and understandable universe created by God using natural forces and natural law. But preference has little to do with it.
One idea is productive. The other is an intellectual dead end.
We see who agriculture hires to design them their next crop, and it isn't people who thought dinosaurs walked the Earth alongside man, but people with an understanding of the concepts of biological evolution.
My family broke the prairie sod, and have been out-producing the world for many generations since.
And they did it long before Monsanto and the others starting tinkering with the genes God made.

Humans were selectively breeding for thousand of years before people understood the biological concepts involved. Some perhaps would wish it were still so.

What we know about things is not because of your pet theory. It’s because we’ve examined how things naturally work, and have learned how to manipulate the natural laws to our benefit.
But kind continues to beget kind. Man is still confined to working with the materials our Creator gave us.
Just because you repeat something over and over again doesn't make it true.

Can you explain logically how such an omnipotent Being could be limited in His ability to create anything in a *poof* if He wanted?

I don't believe that God couldn't have done it all in a “poof” last Thursday, but the evidence doesn't support such, and such is an idea without any applicability; it is an intellectual dead end that leads to no further data or discovery.
It may well be true. But it isn't productive, and all the evidence says it is NOT true.
But to me it is a far grander view of God that set in motion all things to unfold according to a self consistent and understandable plan, working with the natural forces and natural laws that God created.
But once again, my own preference is immaterial. One is a productive idea that is scientific and leads to further scientific data and discovery, and the other is not.
The Bible says the Heavens proclaim the glory of God. Their immensity and vast age do indeed speak of the immensity of the Creator of all.
But to a “poof” creationist is has to all be trickery and a lie, starlight showing the death of stars that never actually existed within the last few thousand years.
So once again with personal preference, it seems not only a useless idea, but a foolish one.
