May I presume, like the Iditarod that racers have to carry their own supplies?
No the runner is required to have at least one 4 wheeled support vehicle with at least two people as crew. They can have a maximum of two support vehicles and six crew members.

I have considerable experience in desert backpacking and you certainly don't need anything like 5 gpd to drink. I would assume that amount includes water for minimal washing, etc.
Two gpd, however, is a good amount to plan on. This is about 17 pounds per day, which means summer backpacking away from reliable water sources is very difficult and frankly a really bad idea. The possible consequences of something as simple as a sprained ankle are just too severe.
My summer desert trips have been limited to canyons with a more or less continuous stream, which means you can sit down in the water fully clothed every half hour or so and have a continuous portable swamp cooler. Can stay remarkably comfortable that way.
Some of the older homes here in the Coachella Valley have their water heaters inside...and in summer, they "reverse" - run the tap on cold for a hot shower, and use the turned-off water heater as their cool source.
