Collards seem to be an acquired taste—I still like mine with lots of ham!
They’re really hard to grow in the middle of the summer. Collards are a cool weather crop but in order to have them ready in mid Aug/Sept we have to start them in July. OTOH, we have quite a rep for having THE best collard plants around!
I love “lots of ham”, too..I don’t indulge often now that I must watch out for cholesterol ..so boring!
I’ve given up! I pretty much eat what I want. We’ve decided that anything that tastes good isnt good for you. if it tastes bad, eat all you want!
My boss takes a supplement made of dried muscadine grape hulls for his chol. His brother’s cholesterol dropped enough that his doctor cut his chol. meds in half. Lots of antioxidants in them too.

I gave up bacon and eggs for chocolate..LOL
Count me in on loving those southren-cooked greens... so good. Collards are also one of our best sources of calcium.
Oh Yorkie, that is so beautiful. I’m all weepy now.
We honor your husband and his service with all our hearts.
Give me some deep fried okra to go with them and I am in heaven,
Well done, MEG... listening now and wondering how we could ever pay adequate tribute to our Heroes. We can only try...
Thank you, Dita..Indeed..we can only try.
Gonna have to fry a MESS of okra, cuz I love it too!!!
Mmmmmm, okra!!:)
I would never touch stewed okra but fried okra is one of my most favorites. I could eat the first pan cooked waiting on the next pan of okra to fry.
Oh, ‘Dita, I didn’t mean to make anyone teary-eyed - but to share somehow, my husband’s respect for our country. Thank you, Meg and Amy, too, for replying. It touched my heart deeply.
I finally got back to normal sleeping patterns..One of my tricks was to turn off the computer at night..Here I am again..LOL..I must say goodnight and TRY to go to bed like normal folks do (I am a born nightowl)
Loved “seeing” you all!
‘Nite, MEG, we look forward to “seeing” you again:)
It was very moving... You shared his love of country beautifully.(((Hugs)))
I am saying good night, sweet dreams to all.
