I’m trying to organize ideas for a county fair that I’d like to get going in our county. We’ve not had one in eons and the mayor likes the idea so I’m trying to figure out some cost-effective ways to get it done, I thought about bartering with some local companies, exchanging free advertising for the use of certain items. I want it to be an old-timey, back to basics county fair. I thought that I could work with the county extension office to encourage our young people to get interested in self-sufficiency and old traditional ways that are mostly foreign to young people of today. I think that it would be something new to our tech oriented youth. I’m doing this as an individual citizen and hope that it does materialize. Any ideas would be appreciated.

Au Gratin Potato Casserole
Prep: 10 min.;
Bake: 1 hr., 20 min.
Ingredients
1 (32-ounce) package frozen Southern-style hash browns
1 (16-ounce) container sour cream
1 cups (8 ounces) shredded Cheddar cheese
1 (10 3/4-ounce) can cream of mushroom soup
1 small onion, finely chopped
1/4 teaspoon pepper
2 cups crushed cornflakes cereal
1/2 cup melted butter
Preparation
Stir together first 6 ingredients in a large bowl.
Spoon potato mixture into a lightly greased 13- x 9-inch baking dish.
Sprinkle evenly with crushed cornflakes, and drizzle evenly with butter.
Bake at 325° for 1 hour and 20 minutes or until bubbly.
Note: For testing purposes only, we used Ore-Ida Southern Style Hash Browns.

INGREDIENTS (Nutrition)
* 2 cups instant rice
* 1 (15 ounce) can condensed French onion soup
* 2 (10.75 ounce) cans condensed cream of mushroom soup
* 1/4 pound butter, cubed DIRECTIONS
1. In a 9x11 inch microwave safe dish, mix together the rice, French onion soup, mushroom soup and butter.
2. Cook in microwave oven on high power for 10 minutes or until boiling. Decrease power to medium, stir and cook for 20 minutes. Serve when all liquid is absorbed.

INGREDIENTS
* 1 cup butter, softened
* 1 cup sugar
* 4 eggs
* 1 (20 ounce) can unsweetened crushed pineapple, drained
* 5 slices white bread, cubed DIRECTIONS
1. In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Stir in pineapple. Gently fold in bread cubes.
2. Spoon into a greased 2-qt. baking dish. Bake, uncovered, at 350 degrees F for 35-40 minutes or until top is lightly golden. Serve warm.

Smothered Pork Chops
4 pork loin chops
1 onion, coarsely chopped
1 can condensed cream of mushroom soup
1 t. dried thyme
1/2 c. water
Season pork chops with salt and pepper to taste. Spray a heavy
nonstick pan or Dutch oven with nonstick cooking spray and place over
medium high heat. Cook pork chops 2 minutes per side, or until
browned. Transfer to a platter.
Add onion to drippings in pan and cook 5 to 7 minutes, stirring
frequently. Whisk in remaining ingredients. Bring to a boil over
high heat.
Return pork chops and any accumulated juices to pan. Reduce heat to
medium low, cover pan and cook about 7 minutes or until pork is cooked
throughout.

* 1 cup Italian bread crumbs
Directions
Preheat oven to 350 degrees F. Saute squash, onion, and pepper in a saute pan with olive oil until squash is soft. Add salt and white pepper. Put into a casserole dish. Mix the cheese and 1/2 cup of bread crumbs into the casserole dish with the vegetables. Sprinkle remaining 1/2 cup of bread crumbs on top of casserole. Bake until golden brown.

2 c Potatoes, peeled, diced
3/4 c Carrots, diced
2 sl Bacon
1/3 c Milk
2 Eggs, beaten
1/2 c Parmesan
1/4 c Green onion, sliced
3 T Sour cream OR plain yogurt
1 T Parmesan
In a medium saucepan cook potatoes and carrots, covered, in boiling water about 12 minutes or until carrots are tender. Meanwhile, in a small skillet cook bacon until crisp. Drain, crumble and set aside. In a large mixer bowl mash potatoes and carrots with a potato masher or an electric mixer on low speed. Gradually beat in the milk till mixture is creamy. Stir in eggs, the 1/2 cup of parmesan cheese, green onion, and sour cream or yogurt. Transfer to a 1-quart casserole. Bake, uncovered, in a 350` oven for 20 minutes. Sprinkle with the bacon and 1 tablespoon parmesan cheese. Bake for 15 minutes more or until center is set.

I got this recipe out of magazine. It was quick, easy, and we really liked it.
Easy Chicken & Cheese Enchiladas
1 can Cream of Chicken Soup
1/2 cup sour Cream
1 cup salsa
2 tsp. chili powder
2 cups chopped, cooked chicken
1/2 cup shredded cheese
6 flour tortillas
1 small tomato, chopped
1 green onion, sliced
1) Stir the soup, sour cream, salsa and chili powder in a medium bowl.
2) Stir 1 cup of the above mixture, chicken and cheese in a separate bowl.
3) Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam side down in an 11x8 shallow baking dish. Pour the remaining salsa mixture over the tortillas. Cover the baking dish.
4) Bake at 350F for 40 minutes, or until the enchiladas are hot and bubbling. Top with tomato and onion.
After they were cooked, I took the tin foil off and put some shredded cheese on top and put back in the oven until the cheese melted.

Easy and Delicious Chicken
1 (8 ounce) bottle Italian-style salad dressing
1/2 teaspoon dried basil 1/2 teaspoon dried basil
6 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup
salt and pepper to taste
1/2 teaspoon dried thyme
1 cup chicken broth
1 (8 ounce) package cream cheese
In a slow cooker, combine the chicken breasts and Italian-style
dressing. Cover, and cook on Low for 6 to 8 hours.
Drain off the juices, and shred the chicken meat. In a medium bowl, mix
the soup, broth, cream cheese, basil, thyme, salt, and pepper. Pour
over the chicken in the slow cooker. Continue cooking on Low for 1 hour.
Serve over some type of pasta

I have never set it up, but have donated enough, when I had my real estate office.
Think of a program, or flyers, or? and offer a small add, for a donation.
I have noticed lately that some high end news letters on the computer, no longer have a set price, but say “donate as you can”, and appear to be meeting the goal.
Ask for donations of things you will need, cups, fliers, food, paint....etc.
Is this going to be a one time meeting or a regular?
What does a home maker need to know...
Cooking, baking bread, making butter, making cloth, spinning yarn/thread.
Tanning hides, raising animals, gardens, repairing equipment.
Quiltmaking, weaving [finger weaving is fine for kids and can be very attractive, I made several colorful belts that I wore]
Soapmaking.
Canning.
Look for the small producer, the housewife who makes soap and sells at the swapmeet, or on the internet and might give you a day or two of demonstrations.
I can can never remember what they are called, the groups that re-enact history, they would be a source of help.
Where are you located?
If you want the kids to remember, then they must have the project to take home with them, or a sample of it.
You can get people to saving the styrofoam coffee and larger cups for planters.
Bean bag type dolls and simple toys.
I would think that first comes the When? then Where? and how many times.
Here, this type of project might be run under the Parks department, the part that takes care of the public swimming pool and plans summer activities for the kids.

Potato Bread ABM

Yield: 2 pound loaf
Comments: This is a great bread. I added about 2 tablespoons more milk to
form a nice dough. I used the dough cycle and when done I cut the dough in
half and then made a 1 pound loaf and shaped the rest into dinner rolls. I
baked this bread in a 350° oven for about 35 minutes and baked the dinner
rolls at 400° for 12 to 15 minutes
Ingredients:
1 1/4 cups milk
3 tablespoons vegetable oil
2 teaspoons salt
3 tablespoons sugar
4 tablespoons instant potato flakes
2 cups bread flour
2 cups whole wheat flour
1 teaspoon vitamin C powder
2 teaspoons active dry yeast
1/2 cup sunflower seeds , add seeds at the beep
1. Place all ingredients in machine according to manufacturer’s directions.
Program for regular or basic, light crust. Press start. After first 10
minutes of kneading, make any necessary adjustments. Add sunflower seeds at
the beep

Skillet Apple Chicken
2 1/2 tablespoons olive oil
2 boneless skinless chicken breasts, cut into 1/4-inch strips
1 sweet apple - peeled, cored and thinly sliced
1 1/2 tablespoons garlic salt
1 tablespoon cracked black pepper
1 teaspoon pumpkin pie spice
1 1/2 teaspoons chopped dried tarragon
Heat the olive oil in a large skillet over medium heat, and cook the chicken 5 minutes.

Almost like a pound cake, this bread machine sensation is light,
golden and irresistible! This is wonderful! I make it and we use it
like a coffee cake or French toast!
1/2 cup water
1 tablespoon vanilla
1/3 cup sour cream
1 egg
1 tablespoon butter or margarine, softened
3 cups Gold Medal® Better for Bread bread flour
3 tablespoons sugar
1 1/4 teaspoons salt
2 teaspoons bread machine or quick active dry yeast
Measure carefully, placing all ingredients in bread machine pan in
the order recommended by the manufacturer.
Select Sweet or Basic/White cycle. Use Light crust color. Do not use
delay cycle. Remove baked bread from pan, and cool on wire rack.

Homemade Tortilla Chips
corn tortillas
cooking spray
kosher salt
Preheat oven to 425 degrees.
Spray one side of each tortilla and stack up (I usually do 5 at a
time, as that fs all that will fit on my baking sheet).
Take a knife or pizza cutter and slice the stack into quarters or
sixths.
Lay out the chips, sprayed side down on the cooling racks on your
baking sheet.
Spray the top with cooking spray.
Bake for 10-12 minutes (will vary from oven to oven, but they should
come out golden brown around the edges).
Layout on a kitchen towel or paper towels to cool and sprinkle with
salt or other spices as preferred.

3. Gluten Free Rhubarb Muffins and Gluten Free Mix

1 1/4 cups brown sugar
1/2 cup oil
1 egg
2 tsp vanilla
1 cup buttermilk or sour milk
1½ cups diced rhubarb
½ cup nuts (optional)

1 tsp baking soda
1 tsp baking powder
½ tsp salt

Combine dry ingreds. Combine rest of ingreds. and add to dry

Topping:

Came accross this recipe over the internet, while looking for a wheat-
free pancake recipe that did not use too many different flours. It is
really good. made it using banana yogurt. It was a big hit at our
house from the 3 year old to the 37 year old. This recipe works well
cut in half.
4 eggs
1 teaspoon baking powder
3 tablespoons sugar
1/4 cup water or milk
1/2 teaspoon salt
1 1/2 cups rice flour
2 cups sour cream or yogurt
Blend all ingredients until there are no lumps.
Drop batter by spoon onto lightly greased griddle until 1 side
bubbles.
Flip pancakes and bake until golden brown.

1 Tbsp. salt
2 cups solid vegetable shortening
In a large bowl, combine flour, milk, baking powder, and salt. With a
pastry blender or two knives, cut in shortening until the mixture looks
like coarse cornmeal and the shortening is evenly distributed. Store in
tightly closed covered container in a dark, cool place. Use in place
of ‘Bisquick’ in any recipe.

3 cups flour
2 Tbsp. sugar
1 Tbsp. nonfat dry milk powder
1-1/2 tsp. salt
2-1/2 tsp. active dry yeast
1-1/4 cups warm water
1 Tbsp. vegetable oil
In large bowl, mix flour, sugar, dry milk and salt until combined.
Place inside a one quart jar with screw top lid. Put yeast in a very
small ziplock plastic bag and place over flour mixture in jar before
adding lid. Label and store in a cool place.
When ready to bake bread, place warm water and vegetable oil into the
bottom of the bread pan of your bread maker. Place dry ingredients
from jar on top of wet ingredients, reserving yeast for last or
follow directions of your bread maker manufacturer. Select White -
Light Crust Color. Remove bread from pan after baking cycle and cool
on wire rack for 1 hour before slicing.

6 cups flour
1 Tbsp. salt
4 tsp. sugar
2-1/2 cups solid vegetable shortening
Mix the dry ingredients in a large bowl. Cut in the vegetable
shortening until mixture is the consistency of coarse meal. Store in
refrigerator in airtight container.
For pie crust, scoop out 2-1/2 cups of the mix and combine it with 3-
5 Tbsp. cold water and 1 tsp. lemon juice. Mix lightly with a fork,
tossing the mixture, until it holds together when squeezed gently
into a ball. Separate into two balls and roll out for double crust
pie. Use 1-1/4 cups of the mix, 2-3 Tbsp. cold water and 1/2 tsp.
lemon juice for a single crust pie.
This makes enough for 3 double crust pies.

1 cup chicken stock
2 tsp. seasoned salt
1/8 tsp. cayenne pepper
1 tsp. celery seed
1 tbsp. dried parsley flakes
1 tbsp. Worcestershire sauce
1/2 cup butter
4 eggs
1/2 cup cooked chicken, finely diced
2 tbsp. toasted almonds, chopped
Sift flour. In a saucepan over low heat, combine stock, salt, pepper,
seed, flakes, Worcestershire sauce and butter, and bring to a boil.
Add flour at once, stirring vigorously until mixture forms a ball
(like cream puffs) and leaves the side of the pan (about 3 minutes).
Remove from heat. Add eggs one at a time and beat thoroughly after
each one. Continue beating until a thick dough forms. Stir in chicken
and almonds. Drop by small teaspoonfuls onto greased baking sheet.
Bake at 450 deg. F. for 10-15 minutes or until browned. Serve hot or
freeze in an airtight container. To thaw and crisp, put puffs on
baking sheet and heat at 250 for 10 to 15 minutes. These are good
served with Chinese mustard or apricot preserves, warmed.

Brunch Scones
1 3/4 cups all-purpose flour
4 teaspoons baking powder
5 tablespoons unsalted butter
5 tablespoons white sugar
2/3 cup whole milk
1/2 cup currants
1 egg yolk, beaten
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet or line with baking parchment.
Sift flour and baking powder into a medium bowl. Rub butter and sugar into flour to form a fine crumble. Make a well in center, and add milk and currants. Knead gently together, being careful not to over mix. Dough will be sticky.
On a generously floured surface, roll out dough to 3/4 inch thickness. Stamp out 2 1/2 inch rounds with a plain pastry cutter. Transfer to prepared pan, and brush tops with egg yolk. Allow to stand for 15 minutes.
Bake in preheated oven until risen and lightly golden on top, 12 to 15 minutes. Remove to a rack to cool.

This is our standard crust -
2 pkg. yeast
2 cups warm water
2 tsp. sugar/honey
2 Tbsp. oil (olive works best)
1-2 tsp. salt
5 cups flour (may not need this much)
mix yeast, water and sweetener. Let sit for about 5 min.
Mix in rest of ing. Oil bowl and let dough sit to rise.
I oil pan and let dough rise there. After dough is relaxed, about
20 min. it can be stretched to fit pans.

Multi-Grain Scones
10 Scones
1 egg
1/2 cup sugar
5 tablespoons grapeseed or expeller-pressed canola oil
1/8 teaspoon lemon zest
1/2 cup oatmeal (not instant)
1/4 cup wheat bran
1 1/2 cups unbleached white flour
2 tablespoons millet
2 tablespoons poppy seeds
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 cup milk
Lemon Topping:
3 tbsp freshly squeezed lemon juice
1/4 cup confectioners sugar
1. Preheat oven to 375 degrees F.
2. Whisk the egg, sugar, and oil together in a bowl. Mix the lemon
zest and all of the dry ingredients together in a separate bowl and
stir with a wooden spoon until all of them are evenly dispersed
throughout. Slowly add the dry ingredients into the egg, sugar, and
oil, and mix to create a thick dough. Add the milk and mix well.
3. Lightly grease a baking pan. Scoop up tablespoonfuls of the dough
and drop them one by one in mounds onto the baking sheet, leaving 2
inches of space between. You should have about 10 scones. Bake for
15-20 minutes, just until the crust is barely golden brown and the
dough is dry. Remove from the oven and let cool for 10 minutes. With a
fork mix the Lemon Topping ingredients until the sugar is completely

Germs Go Global: Why Emerging Infectious Diseases Are a Threat to America finds that at least 170,000 Americans die annually from newly emerging and re-emerging infectious diseases, a number that could increase dramatically during a severe flu pandemic or yet-unknown disease outbreak. Factors including globalization, increased antimicrobial (drug) resistance, and climate and weather changes are contributing to the increased threat.
The report finds that the nations defenses against emerging infectious diseases are insufficient, creating serious consequences for the U.S. health system, economy, and national security.
