Fried Dill Pickles

* 1 Egg — beaten
* 3 1/2 cups flour plus 1 tbsp, divided
* 1 cup milk
* 1 tablespoon Worcestershire sauce
* 6 drops Hot sauce
* 1 teaspoon Salt
* 3/4 teaspoon Pepper
* 1 quart Sliced dill pickles
* Salt
* Pepper
* Vegetable oil

Combine egg, 1 tbsp flour, milk, Worcestershire sauce, and hot sauce; stir well and set aside. Combine 3.1/2 cups flour, salt, and pepper; mix well. Dip drained pickles into milk mixture and dredge in flour mixture. Deep fry at 350° until pickles float to the surface. Remove to paper towels or brown paper bags to drain.

Common Causes Of Poor Quality Pickles: Tip Sheet

If you plan on doing any cucumber pickling this year, here’s a tip sheet of common pickle problems and why they happen. I’ve also included a recipe for homemade pickling spice blend at the bottom.

Shriveled Pickles

* Shriveling may result from using too strong a vinegar, sugar, or salt solution at the start of the pickling process. In making the very sweet or very sour pickles, it is best to start with a dilute solution and increase gradually to the desired strength.
* Overcooking or overprocessing may also cause shriveling.

Hollow Pickles

Hollowness in pickles usually results from:

* Poorly developed cucumbers.
* Holding cucumbers too long before pickling
* Too rapid fermentation.
* Too strong or too weak a brine during fermentation.

Soft or Slippery Pickles

These generally result from microbial action which causes spoilage. Once a pickle becomes soft it cannot be made firm. Microbial activity may be cause by:

* Too little salt or acid.
* Cucumbers not covered with brine during fermentation period.
* Scum scattered throughout the brine during fermentation period.
* Insufficient heat treatment.
* A seal that is not airtight.
* Moldy garlic or spices.

Blossoms, if not entirely removed from the cucumbers before fermentation, may contain fungi or yeasts responsible for enzymatic softening of pickles.

Dark Pickles

Darkness in pickles may be caused by:

* Use of ground spices.
* Too much spice.
* Iodized salt.
* Overcooking.
* Minerals in water, especially iron.
* Use of iron utensils.

Pickling Spice Blend

Combine 2 TBS each:

allspice berries
cardamom seeds
coriander seeds
whole cloves
mustard seeds
peppercorns

Add:

2 bay leaves (crumbled)
2 cinnamon sticks (broken)
2 small pieces dried gingerroot (chopped)
2 small dried red chilies (crushed) or 1-2 tsp hot pepper flakes.

* Store in a tightly sealed container until ready to use.

Recipe #1

Ingredients:

3 eggs, well beaten
3/4 cup white sugar
1/2 cup cream
1/2 cup vinegar

1 small tin pimento (finely sliced)
3 tsp mustard (level measure)
1 tsp salt

Directions:

* Mix all ingredients except pimento and pickles. Cook slowly over medium heat, continuously stirring. When thick, remove from stove.
* Add picles and pimento, mix well.
* Cool, then store in sterilized jar.

Recipe #2

Ingredients:

3 eggs
1 cup white sugar
1 cup vinegar
1 cup sweet cucumber pickles (finely chopped)
1/2 cup butter
1/3 cup canned milk
1 small pkg. cream cheese
3 tsp mustard
1 tsp salt

Directions:

* Beat eggs and milk, add other ingredients. Cook in double boiler until thick.

These pickles are so easy to make that anyone can do it!

Homemade Sweet Refrigerator Pickles

Brine Ingredients:

4 cups sugar
2 cups vinegar
2 TBS pickling salt
1 tsp celery seed
1 tsp turmeric
1 tsp mustard seed

First Prepare:

Ice cream pail about 3/4 full with thin sliced cucumbers (washed & cleaned) and some pearl onions tossed in (as many or as little as you like).

Directions:

Step 1:

Mix the brine ingredients together then let sit for 1 hour until the sugar is completely dissolved.

Step 2:

Pour the brine mixture over the cucumbers in the pail & cover with lid (make sure it’s sealed properly so it’s airtight). Make sure the slices are all covered in brine.

Step 3:

Refrigerate the pail of cucumbers and stir every other day.

Serve:

After 12 days. Keep refrigerated and you can enjoy these for up to 3 months.

Pickles And Relishes: Points On Pickling

1. Use firm, good quality vegetables and fruits for making pickles.
2. Some vegetables, such as cucumbers require soaking in brine before covering with vinegar. This soaking helps maintain the firmness and color of the vegetables during the pickling process. It also reduces bitterness. Cucumbers for gherkins should be placed in brine as soon after picking as possible. Cucumbers for dills should be placed in cold water. Hollow centers may result if cucumbers are held at room temperature for even a few hours.

The proportion of 1 cup fine salt or 1 1/2 cups coarse salt to 2 quarts (10 cups) water makes a good brine. Too weak a brine will cause pickles to become soft or too strong a brine will cause them to shrivel and become tough.

Be sure to use a pickling salt. Free-running salt has had a chemical added to keep it from caking and is not recommended for pickling and brining.
3. Use good quality vinegar. Both cider and blended vinegar have good flavor, but white vinegar gives better color where light colored foods such as onions and cauliflower are used. Never dilute vinegar unless the recipe calls for it.
4. Use spices with caution. A dark color or bitter flavor may result from using too much spice or from boiling the spice too long with vinegar. Whole spices give better color and flavor than ground spices. Whole spices should be tied loosely in a cheesecloth bag, cooked with vinegar or pickle, then removed.
5. Pickles should be stored in clean glass jars, sealers, or crocks. If kept in crocks, pickles should be well covered with vinegar solution to prevent spoilage. A plate or wooden board cut to fit inside the crock should be placed on top of the pickles and weighted down.

Relishes and sauces should be packed in hot, sterilized jars and completely sealed.

Recipe #1

Ingredients:

36 ripe tomatoes
6 medium onions–covered in 2 TBS salt
12 apples OR 12 pears, peeled and diced
4 cups brown sugar
1 cup diluted vinegar

Spice Bag:

1 TBS allspice
1 TBS cinnamon
1 TBS cloves

Directions:

* Sprinkle onions in salt and let stand for one hour.
* Boil all ingredients (including spice bag) for 2 hours, carefully. Bottle.

Recipe #2

30 ripe tomatoes peeled
6 large onions, chopped
6 peaches, chopped
6 pears, chopped
5 cups sugar
3 cups vinegar
3 small red or green peppers, chopped
2 TBS salt
2 TBS mixed spices (in spice bag)

Directions:

* Mix all ingredients together. Place spices in a bag. Boil everything until thickened, at least one hour. Stir frequently while boiling. Remove from heat and store in sterilized bottles.

Recipe #3

20 large tomatoes (ripe)
4 peaches
4 pears
4 onions (large)
3 cups sugar (white)
2 1/4 cups vinegar
3 TBS pickling salt
3 TBS pickling spice (tied in bag)

* Peel tomatoes and cut up all ingredients. Add sugar, salt, vinegar and pickling spice bag. Cook for about three hours, stirring frequently.

At the bottom of this post you’ll find some information about signs to watch for when determining if medical attention is needed as well as blister care and signs of infection.

Melanoma (skin cancer) has grown to be a serious concern in our time. It’s so important to protect our children (and ourselves) as much as we can from getting sunburned. Please keep the kiddos lathered up in sunscreen, hats and sunglasses too (helps limit the chances of future cataracts). Each sunburn a child experiences can increase their chance of future problems.

Sunburn Relief Home Remedies

Vinegar: Can use white household vinegar or apple cider vinegar

* Spray vinegar all over burn or soak small towels in vinegar and apply to skin
* Bathe in a cool bath with 2 - 3 cups of vinegar
* Rose Petal Vinegar (skip the cloves in the recipe when using for sunburn care) - Spray on skin
* Lavender Vinegar - Spray on skin

Tea: The tannic acid from tea is soothing for sunburns

* Steep a large pot of very strong tea using 4 - 6 tea bags. Refrigerate the tea until it’s cold then soak small towels in the tea and apply to burn area. Can also spray the cold tea on burn. The tea could stain the towels, you may not want to use your best.
* Save used tea bags and apply to burn area (make sure to have bags at room temperature first).
* Bathe in a cool bath with several tea bags in the water.

Dairy:

* Soak small towels in milk and apply to burn area.
* Soak in a bath with cool water and a gallon of milk.
* Plain Yogurt - apply directly to burn area.

Aloe Vera:

* Aloe Vera Gel, either purchased or taken fresh from an aloe leaf.
* Lotions that include Aloe Vera.

Oatmeal:

* Fill a bath with cool water and add 2 cups oatmeal. Soak in bath for about 30 minutes.
* Mix oatmeal with raw egg whites and apply to sunburn.

Baking Soda:

* Fill bath with cool water and add 1 - 2 cups baking soda, dissolve. Soak in tub for 30 minutes.
* Fill a spray bottle with cool water and dissolve 1/4 cup baking soda. Spritz on burned skin.

Essential Oils: Caution when applying on children. Keep out of eyes and mouth.

* Fill a spray bottle with cool water and add a few drops of choice, or add 10 to 12 drops essential oils to a bath full of cool water and soak. Lavender Oil or Chamomile Oil.

Cornstarch:

* Make a paste of cornstarch and water, apply to skin and allow to dry.
* Fill a spray bottle with cool water and add some cornstarch, mix to dissolve. Spray on burn.
* Fill a bath with cool water and add 1 cup cornstarch, dissolve. Soak in tub for 30 minutes.
* Soak in tub or shower with cool water. Pat dry. Lightly dust burn area with cornstarch.
* 1/2 cup cornstarch + 1/2 cup baking soda added to bath of cool water, dissolve. Soak for 30 minutes.

Veggies

Cucumbers:

* Slices added directly to burn or mash first then apply to burn.
* Grate cucumbers and mix with milk. Apply directly to sunburn.

Potatoes:

* Grate potatoes and apply directly to burn–include as much of the potato juice as possible.

Egg Whites:

* Apply raw egg whites to skin.
* Mix 2 egg whites, 1 TBS honey, 1 TBS witch hazel and apply to burn.

Witch Hazel:

* Spray directly on burn area.

Honey:

* Smooth honey over the burn or slather honey on a strip of gauze and apply to skin.
* Mix honey with lime or lemon juice (80/20) and apply to burn.
* Mix honey 50/50 with milk, stir well, then apply to skin.

Tomatoes:

* 1/4 cup tomato juice or tomato paste mixed with 1 1/2 cups buttermilk. Apply to burn area.
* Slice or mash tomatoes and apply to burn.
* Mash tomatoes and mix with an equal amount of buttermilk. Apply to burned skin.
* Add 2 cups tomato juice to bath of cool water, soak.

Water & Ice:

* Spritz chilled water on burn.
* Soak in a cool bath or take a cool shower.
* Wrap ice packs, ice cubes or bags of frozen vegetables in a towel and then apply to burn area to sooth.
* Drink lots of water to keep hydrated and help the healing process.
* Mix 1/4 cup lemon or lime juice in a spray bottle filled with cool water. Shake and spritz body as needed.

More Skin Soothers: Apply directly to sunburn

* Cocoa Butter
* Shaving Cream
* Vitamin E Cream or Oil (open capsules & apply oil)
* Diaper Rash Ointment

More Bath Soaks:

* 2 cups oatmeal, 2 cups milk, 1/4 cup honey
* Epsom salt bath
* 1 cup Epsom salts, 1 cup Baking soda

More Pantry Fixins:

* Smear mustard on burned skin.
* Soak cloth in pickle juice and apply to burned skin. Or spray pickle juice directly on burn.
* Puree strawberries and apply directly to skin.

Infusions

Lettuce: Quarter the head of lettuce and boil (moderate) in a pot of water for 10 minutes. Turn off heat, cover pot and allow to steep. Strain water and chill. Spray lettuce water directly on burn area. Can also chill cooked leaves and apply directly to burn area.

Cabbage: Same procedure as Lettuce.

Mint: Handful of fresh mint and proceed as above.

Plantain: Handful of fresh mint and proceed as above.

Strawberry Leaves: Save strawberry leaves and trimmings until you have a generous handful. Boil in 2 cups of water and proceed as above.

Commercial Products: Apply directly to burn area

* Noxema
* Maalox (Milk of Magnesia)
* Gold Bond Medicated Lotion
* Lanacane Anti-Bacterial First Aid Spray Anesthetic
* Pepto-Bismol
* Preparation H
* Calamine Lotion

Sunburn Blisters: If blisters are present, don’t open or burst them. This will help avoid infection as well as speed the skin healing process, a blister is the body’s way of protecting and healing the damaged skin. Keep the blisters uncovered if possible.

The vinegar & honey remedies as well as antibacterial products are preferable when blisters are involved since they are antibacterial, helps prevent infection.

Some Signs of Infection: Swelling, painful, fever, swollen glands

For Pain Relief: Aspirin or ibuprofen or acetaminophen as directed.

See A Doctor:

* Sunburn is severe
* Purple patches, discolored blotches, or a rash appears
* Eyelids are burned or sore eyes
* Nauseous or vomiting
* Fever
* Faint or dizzy
* Excessive pain
* Chills
* Large amount of blisters
* Headaches
* Swelling

Homemade Rose Petal Vinegar Recipe

* Salad dressing or vinaigrette*
* Facial splash and skin freshener (dilute with water)
* Headache soother (soak cloth with vinegar, squeeze out, then place on forehead)
* Shampoo rinse
* Bath soak (approx 1 cup per full bath)

Rose Petal Vinegar

Ingredients:

2 cups white wine vinegar (heat to near boil)
1 cup rose petals
3 or 4 whole cloves

Directions:

* Gently wash and drain rose petals thoroughly. Carefully remove the white/yellow part of the petals (just snip with scissors). Gently crush the petals to bruise a bit.
* In a sterilized jar, place the rose petals and cloves. Pour hot vinegar over top, roughly mash the petals a bit with a wooden spoon and seal immediately.
* Set aside for 10 days (room temperature and dark). Shake occasionally.
* Strain vinegar and discard the cloves and rose petals.
* Using small decorative jars (sterilized), pour the vinegar and seal.

Tip: If possible, use the freshest petals you can by picking the flowers on the day you’ll be making this recipe.

*Do not consume if chemicals or pesticides were used on the rose bush

Lavender Vinegar Recipes

Picture of Lavender Bunch - Tipnut.comLavender is a wonderfully fragrant herb that can be used in cooking. When combined with vinegar, it can also be used for cleaning. Looks pretty and smells nice!

See tips below for preparation and uses of lavender vinegar.

Lavender Vinegar Recipe

Handful of Lavender flowers
1 Pint White Vinegar

* Combine lavender and vinegar, seal and let sit for 6 weeks before using.

Recipe #2

* Fill a jar with lavender (both flowers and stems)
* Pour cider vinegar over top, seal jar and refrigerate
* Shake daily for two weeks
* Strain the vinegar and use

Raspberry & Lavender Vinegar - Recipe #3

1 cup fresh raspberries
5 sprigs of Lavender (approx)
1 quart white wine vinegar
1/3 cup sugar

* Place the rasberries in a large 2 quart jar
* Heat the vinegar with sugar and 1 sprig of lavender until the sugar dissolves (don’t boil)
* Pour vinegar mixture over berries in the jar and mash
* Seal jar and store in a dark, cool place for 3 weeks
* After three weeks, strain jar mixture and divide into sterilized jars (or other glass containers), placing a small sprig of lavender in each

This vinegar would not be suitable for cleaning or beauty aids–cooking additive only.

Recipe #4

1 cup fresh lavender (or 1/2 cup dried)
2 tsp lemon zest
2 cups raw apple cider vinegar

* In a canning jar (quart size), pour vinegar over lavender and lemon zest
* Cover with plastic wrap and seal with jar lid. Store in a cool, dark place for four weeks
* Shake daily
* Strain and then pour vinegar in decorative jars and bottles
* Use in cooking

Recipe #5

2 TBS dried lavender buds
2 cups red vinegar

* Bring to boil and remove from heat
* Set aside for 15 minutes
* Strain
* Store sealed in refrigerator; use for cooking

Lavender Syrup

1 cup sugar
1 cup boiling water
2 TBS dried lavender buds
1 strip lemon zest

* Dissolve sugar into boiling water
* Remove from heat
* Add lavender and lemon zest
* Sit for 20 to 30 minutes
* Strain and refrigerate, use for cooking or on foods

Tips to making lavender vinegar:

* Sterilized jars are a must if vinegar will be used for cooking
* Do not allow vinegar to touch metal
* After straining and ready to use, you can add fresh lavender for cosmetic reasons (looks pretty!)
* Store in a cool dark place, refrigerate cooking vinegar
* You can dilute the vinegar if it’s too strong for your tastes–let sit a few days after diluting
* You can use the vinegar for up to a year if you just plan on using it for cleaning and beauty aids

Uses for lavender vinegar:

* Fruit & vegetable salad dressing
* Marinade for meats and vegetables
* Use to clean floors, mirrors, glass (smells wonderful)–don’t use the sugar recipes for cleaning
* Hair rinse (adds shine and helps with dandruff–dilute first and use 1 part vinegar to 8 part water ratio)
* Facial rinse, blemish aid (dilute with water, use a 1 part vinegar to 8 part water ratio)
* Body splash/deodorizer
* Use in facials (good for oily skin)
* Laundry rinse
* Add to baths

You could also bottle the lavender vinegar in small jars to give as gifts :).

Multipurpose Herb Vinegar

Materials Needed:

1 cup finely chopped mixed fresh herbs (try basil, chives, mint, parsely)
2 cups white wine vinegar
Heat resistant jar with lid
Spray bottle

Directions:

* Place chopped herbs in jar.
* Heat the vinegar in a glass pot (or non-reactive pot) and then pour over the herbs.
* Seal jar with lid and steep for three weeks.
* While steeping, shake the jar every other day.
* After three weeks, strain out the herbs and pour the herb vinegar into a spray bottle.

Uses:

* Combat odors by spritzing in the air
* Pet deodorizer (avoid spraying in face)
* Use on salads
* Clean glass
* Sunburn care

* When washing bedding and linens, add some lavender water to the rinse cycle. Your bedding will have a light lavender scent (lavender helps those with sleep problems).
* Use when ironing, spritz a bit of the lavender water on the items being ironed. Will add a nice lavender scent to the garment.
* Lavender water can also be used as a beauty aid, try it as a skin freshener on hot summer days, a hair rinse, splash in the bath or dab around temples for headache relief.
* Insect repellent, try it for mosquito repellent use as well as a mosquito bite itch helper. Lavender deters flies and other insects too.

How To Make Lavender Water - Recipes

Recipe #1

Mason Jar
Lavender Buds
Vodka

Directions:

* Fill the glass jar with lavender and cover completely with vodka. Seal jar.
* Place the jar in a sunny location for about 18 days, rotate and shake the jar each day–morning and night.
* After 18 days, strain the lavender from the vodka and seal the liquid in a clean glass jar.
* Use as needed.

Recipe #2

2 cups water (distilled)
3 TBS vodka
15 drops Lavender essential oil

Directions:

* Mix the essential oil and vodka together then add water. Seal in a jar or bottle, keep in a dark place for 2 weeks before using.

How To Make Rose Water - 4 Recipes

Try some as a facial toner or astringent, in your bath water or as a facial splash (refresher).

Notes on Preparation:

* Rose petals must be freshly picked and have no pesticides or chemicals used on them.
* Pick the roses just after the morning dew has evaporated, about 2 to 3 hours after sunrise.
* Use only the petals, not the stems or leaves.
* Wash the petals quickly to remove any bugs or specks of dirt and immediately process with one of the methods below.
* If you don’t grow your own roses, ask at the local florist or Farmers Market for organic roses.

Items Needed:

Fresh rose petals (3 to 4 quarts)
Ice cubes
Distilled Water
Enamel canning or stock pot with lid
Deep, heavy heat proof bowl

Directions:

* Fill the bottom of the pot with the rose petals and pour water over them until the petals are just covered. Place the bowl in the middle of the pot. The rim should be at least a couple inches higher than the water. If you have a canning rack, you can set the bowl on top of that so the bowl doesn’t sit directly over the heat. A pyrex loaf dish underneath the bowl would do the trick too. Set these in place first before adding the rose petals and water.
* Cover the pot with its lid, but position the lid upside down so that you have a dipped “container” to hold the ice on top (to be added later). Now turn on the heat and bring the water to a boil.
* Once the water is boiling, fill the top of the inverted pot lid with ice cubes. Turn the heat down and keep at a bare simmer for about two hours.
* Top up the ice as needed and quickly peek occasionally to see that the petals don’t boil dry.

This process will enable condensation to form on the top inside of the pot lid. The condensation will drip down into the bowl inside the pot, the liquid inside the bowl is your rose water.

Old Fashioned Rose Water Recipe

Items Needed:

Rose Petals
Distilled Water
Enamel Pot (any size)

Directions:

* Fill the bottom of an enamel pot with the rose petals a few inches deep. Pour distilled water over the petals until they are just covered.
* Turn on heat for the water to be steaming hot, but do not boil. Let the water steam until the petals have lost their color, the water has taken on the color of the rose petals and you see rose oil skimming the surface. This will take approximately 60 minutes.
* Strain the water and squeeze out the liquid from the rose petals, this is your rosewater.

Homemade Rosewater - Quick & Easy Recipe

* For every 1 firmly packed cup of rose petals, pour 2 cups boiling water over top. Cover and steep until the liquid is cool. Strain, squeeze out the liquid from the petals, and refrigerate the rose water in a sterilized jar.

Oven Recipe for Rosewater

* Preheat oven to 450°. Line an enamelware roaster a few inches deep with rose petals. Fill with distilled water until the petals are just covered. Place the roaster uncovered into the oven and bring to a boil.
* As soon as it starts boiling, turn off the heat and cover the roaster. Leave in the oven until the water is cool (several hours). Once cool, strain the water and squeeze all the petals to remove the liquid. Store the rose water in the refrigerator.

Important Notes:

* After preparing the rose water with your recipe of choice, refrigerate in a sealed, sterilized jar.
* Use in recipes that call for rose water, but make sure to use fresh batches. Although the water is refrigerated, my notes have vast discrepancies in shelf life. Some state several days, some say a year.

Rose Water Beauty Aid Additive:

* Add 1 part rubbing alcohol or vodka or witch hazel to 10 parts rose water to use as a facial astringent or toner.

It’s a good idea to not overdo steam facials, too many can be harsh for your skin. Limit yourself to 1 or 2 steam facials a week (maximum), less if your skin is sensitive. If you feel light headed or woozy during the steaming, stop the facial at once.

Home Facials Preparation

* Clean face thoroughly before giving yourself a steam facial and tie hair back so it won’t hang loose around your face.
* Boil a kettle or pot full of water then add the herbs and fruity ingredients (about 1/3 cup fresh or dried herbs and fruit slices per 4 cups of water). Boil for a minute or two then remove from heat. Cover and let steep for about 5 minutes.
* Place pot on counter or table (on top of a towel to protect the table surface) and remove lid. Cover your head with a large clean towel and position your face over the steaming water (with the towel acting as a tent over the bowl to capture the steam).
* Keep your eyes closed and your face at least 10 to 12 inches from the boiling water during the facial. Enjoy the fragrant steam and relax, but don’t overdo it–keep the facial time between 5 to 7 minutes.
* Once the facial is over, splash face with slightly cool water and pat dry.
* You can use a few drops of your favorite essential oils instead of fresh or dried herbs.

Homemade Herbal Bath Bag Recipes

They’re similar to the shower spa bags except these soak in the tub with you, making the bath a luxurious tea spa. If you just need some tender foot therapy to ease sore feet, these can be added to foot baths–or you can try the foot soak recipes.

Basic Instructions:

Make drawstring bags out of cheesecloth, organza or muslin, enough to hold anywhere from 1/4 cup to 1/2 cup of your favorite herbal bath recipe. Tie them tightly shut so the loose herbs won’t float out into the bath water. After use the contents can be emptied, the bags rinsed out then washed to be refilled and reused.

Bath Preparation Directions:

* Two ways you can enjoy these, either hang the bags on the tap while the hot water is running to fill the bath, making sure the water is running through the bags. Once the tub is filled, let the bag float in the tub with you.
* Infusion Method: Boil a quart of water, turn off heat, add herbal bath bag to water, cover, then steep (let it steep at least 20 minutes for best results). Add all of this piping hot infused water to your bath (be careful not to burn yourself) and plop the herbal bag in the bath to soak while you’re in it too. Note: Do not steep the herbs in an aluminum pot.

Herbal Bath Tea Recipes:

These amounts will make a batch at a time to be stored in an airtight container until you use them. For convenience, fill up your drawstring bags then store.

Basic Milk Bath Starter Recipe

1 1/2 cup powdered milk
1/2 cup Epsom salt
1/8 cup baking soda
2 TBS cornstarch

* Use this as the base for herbal milk bath bags, add whatever dried flowers and herbs you like.

Lavender Bath Soak:

* 1/2 cup dried lavender
* 1 cup Epsom Salts

Lavender Oatmeal Bath:

* 1 cup oatmeal
* 1/2 cup dried lavender

Lavender Oatmeal Milk Bath:

* 1/2 cup powdered milk (or the milk bath starter recipe above)
* 1/2 cup oatmeal
* 1/4 cup dried lavender

Rosemary Oatmeal Bath Tea

* 1/2 cup Oatmeal
* 1/4 cup Rosemary (dried)
* 1/4 cup Chamomile (tea is fine)

Lavender Chamomile Soak:

* 1/2 cup each: Epsom salt, lavender, chamomile

Herbal Splendor:

* 1/2 cup each: thyme, sage, lavender, mint, bay leaves, rosemary

Herbal Soother Bath Soak:

Recipe for Blackhead Remover:

1 TBS Unflavored gelatin
1 1/2 TBS Milk

* Mix together the gelatin and milk then heat in the microwave for about 12 seconds. Remove from microwave and stir with a wooden stir stick (a clean one!). Generously apply to problem areas on the face. Be careful not to apply too close to the eyes.
* Let completely dry (between 15 to 30 minutes) then carefully peel it off. The stuff clogging your pores will be stuck on the peel, the result is similar to the expensive blackhead removal strips you can buy.
* After removing the peel, wash face in very cold water to close the pores.

Tip:

For stubborn blackheads, try a facial steambath first, then using the blackhead peel above. This will open up the pores as well as soften up the blackheads for easier removal.

Facial Steambath Directions:

First wash your face with facial cleansing soap and water. Then fill a bowl with boiling water and place your face down close to the water to be near the steam. Cover your head with a towel to trap the steam around your face. Steam your face for about 10 minutes, then make and apply the blackhead treatment peel above.

Optional: Add tea bags or epsom salt or dried lavender to the boiling water.

Herbal Decongestant Steam Blend

Ingredients:

4 tsp peppermint leaves
3 tsp rosemary
3 tsp thyme

(Makes two treatments)

Directions:

* Mix all the herbs together, split in half and save one part in an airtight container or ziplock bag.
* Bring 4 cups of water to a boil. Remove from heat and add the 1/2 herbal mixture.
* Cover and steep for 10 minutes.

Mix the ingredients well, store in airtight plastic containers or sterilized jars (such as mason jars or small & pretty jam jars). Shake the jar well before using.

You can add as little or as much as you like to the bath, anywhere from 1/4 cup to 1/2 cup should be plenty.

Cinnamon Soak

1 cup powdered milk
1 cup baking soda
3 TBS cornstarch
2 TBS cream of tartar
1 1/2 TBS cinnamon

Soothing Bath Soak

4 cups Epsom salts
1 cup baking soda
1/2 cup sea salt
2 TBS dried herbs (finely ground)

Herbal Milk Bath

2 cups powdered milk
1 cup cornstarch
2 TBS dried herbs (finely ground)

Oatmeal & Cinnamon Milk Soak

1 1/2 cups powdered milk
3/4 cup baking soda
3/4 cup oatmeal (finely grind it first)
3 TBS cornstarch
2 tsp cream of tartar
2 tsp cinnamon

Herbal Salts

1 1/2 cups Epsom salts
3/4 cup baking soda
3/4 cup dried herbs (finely ground)

You could also use any of the recipes found on the herbal bath bag recipes page, but since the ingredients would be loose in the bath instead of in a bag, make sure that you grind up the herbs and oatmeal first so they’re fine in texture.

More Tips:

* If you like fragrant bath soaks, try mixing in a few drops of your essential oils or perfumes. I wouldn’t do this with bath soaks that contain dried herbs or spices already.
* For pretty colors, try adding a few drops of food coloring then shaking the jar really well. Don’t add too much though in case your bath tub gets stained.
* Bath salts and soaks make great gifts in a jar, decorate the lids and jars, maybe add a few bath beads. For a nice touch include the recipe too so the recipient can make some more if they like.

How to Prevent Mosquito Bites

As promised from yesterday’s post for how to stop mosquito bites itching, I’ve compiled a big list of recommendations and home remedies for mosquito repellent suggestions. A few things to note first:

You pretty much have to stop breathing to not attract the attention of a mosquito, a big attractor for them is the carbon dioxide from your breathing. It also seems they’re attracted by scents like perfumes, sweat, body odor as well as body heat. Unless you stop using shampoos, soaps, deodorants and detergents–it’s hard to be scent free.

From what I understand, DEET has proven to be the most effective mosquito repellent. DEET is pretty crazy stuff though, so if you’d like to try less harsh solutions, there are plenty of tips below for you to give a shot.

Something to keep in mind: Since some people seem to be a mosquito magnet while others around them don’t get a single bite, I have the suspicion that there could be a personal body chemistry factor involved. And that could explain why a remedy that works for one person, may not work for another.

I suspect that’s why some people swear by the Bounce sheet method, or the Avon Skin So Soft solution, while others have a different experience. Bounce nor the Avon SSS did a thing for me btw, but I did include them in the list below. I know a few people who SWEAR by them.

Basics for Mosquito Bite Prevention:

* Wear light colored clothing, mosquitoes are attracted to dark clothes
* Keep your body covered as much as possible (including wearing a hat), although mosquitoes can find their way through the fabric–it does cut down on bites

Mosquito Bite Prevention Home Remedies & Tips

Vanilla Extract: A few different recommendations for this one, each contradicting the other. Some say to dab Vanilla Extract on your pulse points, others say to rub it all over your skin & dab your clothes. Some say the cheap stuff is what you have to use, others say the real, pure Vanilla is the only thing that will work. Some say to apply it full strength, others say you can dilute it with water and spray it on. Play around with Vanilla to see what gives you best results–there are plenty of believers for this one as a mosquito deterrent so I think there’s something to it.

Garlic: This isn’t a favorite thing to do day-to-day, but if you’re going camping or hiking through heavily mosquito infested areas, try a garlic powder and water paste. Apply to pulse points, behind knees, on shoes and ankles and a dab or two on your cheeks or somewhere on your face and kneck. Remember–keep out of eyes. And maybe stay out of public places too ;).

Essential Oils: Mix choice of essential oils with rubbing alcohol, or witch hazel, or distilled water and spritz on body or directly on cloth to rub on body (shake before each use). Or add a few drops in baby oil or olive oil then rub on skin. You can also apply drops along a strip of fabric (cotton) and tie around wrist. *Make sure to avoid mouth and eye areas when using essential oils.

* Citronella oil
* Lavender oil
* Catnip oil
* Eucalyptus oil
* Pennyroyal oil

*Seems to be strongly recommended
* Tansy oil

*Seems to be strongly recommended
* Basil oil
* Thyme oil
* Cedar oil
* Tea Tree oil
* Peppermint oil
* Lemongrass oil

Plants: Break off leaves and crush them roughly, rub them all over your clothes and skin. Toss the bruised leaves around the perimeter of your deck or patio. Also plant these in pots and arrange them around the patio. You could also infuse these in water and then use that as a spray.

* Citronella
* Lavender
* Basil
* Catnip
* Pennyroyal
* Tansy
* Marigolds

Commercial Products (other than DEET items)

* Avon’s Skin So Soft (straight or mix 50/50 with rubbing alcohol)
* Bounce Sheets (hanging out of a pocket or waistband)
* Listerine (mixed 50/50 with household vinegar then sprayed all over body)
* Vicks VapoRub

Household Hack:

Spray garlic powder and water all over the yard and bushes. Use a fertilizer hose attachment. Will need to be done bi-weekly (approx) or after a heavy rain.

Items to Eat (daily): Apparently the smell that comes out of your pores from a steady diet of the below deters mosquitoes. The items aren’t meant to be combined, they’re just different suggestions.

* Garlic
* B1 Vitamins
* Brewers Yeast
* Lemons

Thanks to their first feast on my ankles tonight and an earlier comment from Kim, I was inspired to dig through every tip I had regarding mosquito bites and relief from the itching. Scritch Scratch.

I haven’t tried most of the suggestions below, but I’ll note which ones have worked for me.

Here are more than 40 mosquito bite itch relief tips organized in one neat file, each bullet tip is a single method:

Household Items:

* Rub a bar of soap over the itch. I just tried this (Ivory soap) and the relief was near instant. I used a dry bar of soap directly on the skin, but I also have notes that you can spritz bite with water and then run bar of soap over area–or use a wet bar of soap.
* Place a piece of scotch tape on the bite; or dab rubbing alcohol or ammonia on the bite first then stick on a piece of tape.
* Hot water: Take a hot shower, or a hot bath, or apply a hot compress. As hot as you can stand it without burning you.
* Ice cube, ice pack or very cold water

Dabbers: The quicker you can apply one of the remedies below, the faster the relief. These are topical suggestions, apply directly to the bite area.

* Nail Polish
* Strong tea mixed with rubbing alcohol
* Toothpaste (works for me)
* Mouthwash
* Vinegar (apply directly to bite or take a hot bath with 2 cups of vinegar in the water)
* Honey
* Underarm deodorant (solid or roll-on) - apply directly to bite area
* Rubbing Alcohol
* Ammonia
* Bleach
* Tea: Use a hot tea bag or a cotton ball soaked in hot tea to dab on bite area

Pastes: Mix these fresh then apply to bite as soon as possible. The consistency should be nice and thick so it won’t run, yet will still stay in place on the affected area. You could also spritz bite with water then apply grains/powders directly (generously) and rub them in.

* Baking Soda & Water (works for me)
* Meat Tenderizer & Water
* Salt & Water (works for me)
* Epsom Salt & Water (could also do this as a foot soak if it’s the ankle/foot area affected)
* Tums Tablets: crush and add a few drops of water
* Aspirin: crush then add a few drops of water
* Aspirin - crush then apply a few drops of rubbing alcohol

Commercial Product Lotions, Creams & Applications: Apply directly to bite area.

* Calamine Lotion
* Benadryl Cream
* Orajel
* Anbesol
* Caladryl

If a remedy doesn’t provide fast relief, don’t despair. Give it another try, sometimes it will take 2 or 3 applications before it kicks in.

The itch from mosquito bites comes from the saliva of the mosquito that it injects into you as it feasts on your blood. There are several dozen different species of mosquitoes and you may react to some species bites more than others.

If large swelling occurs (like welts), contact a doctor or pharmacist for suggestions (especially if it’s a child with a strong reaction). It could be an allergy to the bite. It’s important to watch the throat for swelling and get treatment asap.

1. Place the brown sugar in an airtight container with a slice of fresh bread placed on top. Seal and leave overnight. It should be soft and fresh again in the morning, if not just let it sit another day or two.

2. Sprinkle a few drops of water over the chunk of hardened sugar, place in a plastic bag, seal, and let sit for a couple days.

3. Place brown sugar in an open container, then top with a moistened cloth (paper towel works too). Let sit overnight.

4. Place the hardened sugar in an airtight container with a few apple slices. This should soften the sugar within the next day or two. Remove apple slices once sugar is soft again.

5. Use foil or plastic wrap to cover the top of the sugar. Then set a dampened sheet of paper towel (not dripping wet) on top of the foil. Place in an airtight container and seal. Let sit overnight or a few days as needed. Remove foil and paper towel once the towel is dry and sugar is fresh again.

6. Buy a clay disc or if you have a pottery piece on hand (from a broken clay pot, etc.), set it in water for about 30 minutes. Dry the piece so it isn’t dripping wet. Put the clay piece in a container with the sugar and seal. Check after a few days. Keep the piece in with your sugar for months if you’d like–will keep it soft.

7. Quick Tip #1: Need the sugar soft now? Put the brown sugar in a container and place in the microwave with a small bowl full of water beside it. Microwave for about 1 minute–check. If it’s still hard, try for another 30 seconds. You can keep doing this until the sugar is soft, but watch that you don’t melt the sugar.

8. Quick Tip #2: Place the hardened sugar in a baking pan and set in oven (temperature at about 250° F). Check after 5 minutes. If still not soft, continue checking every few minutes until it’s soft and ready to use.

9. Quick Tip #3: Place the brown sugar chunk in a microwave safe plastic bag. Take a square of paper towel and moisten with water (not dripping wet–wring out excess). Place the wet paper towel in the bag with the sugar and seal. Place in the microwave for approximately 20 seconds. If still not soft, microwave for a few seconds more, repeating until the sugar is ready to use. Be careful not to melt the sugar.

10. Quick Tip #4: Stick chunks of the brown sugar in a food processor or blender and chop/pulse until useable.

For best results, make sure to store brown sugar in a sealed, airtight container. A clay disc kept in the container can keep it soft for months (see tip above for clay disc).

Brown sugar can also be stored in the freezer and thawed a few hours before using.

this is the first recipe page I wrote.. before I got more into session cooking. Most of these recipes are my “basics”, the things I always try to keep in the freezer.. I have other regulars, but this was a session I did last year and it was a good amount to try in a day giving a good mixture of recipes in the freezer.

Garlic pizza crust
This is the best ..one of the few recipes that is MINE..lol. This started off as a mistake, turning back and forth in a cook book...lol We make this every friday night and have pizza and movies in the living room..

2 pkg. yeast (I use 2 Tblsp. of bulk yeast)
2 c tempid water (90*)
2 Tblsp. sugar
1/2 c oil
1 tsp. salt
5 1/2 - 6 cups flour
3 cloves crushed garlic

Dissolve yeast in water and add sugar.. wait a few minutes.. add oil and salt and garlic .. mix in 3 cups flour and whip about 10 min till it leaves the side of the mixer bowl.. add remaining flour w/ dough hook or by hand.. knead till smooth.. allow to rise twice in the bowl.. punch down.. (I rush this a bit) oil baking sheets ..use fingers press out to edges..

Makes 2 pizzas, cookie sheet size, let rise a bit and top.. bake at 425* 20 min.. this is fantastic.. crust smells slightly like garlic bread.. but is not strong.. We usually make one cheese and the other with gr. beef, ham, onion and mushroom. even the kids say it is the best crust so far.

This makes 2 cookie sheet sized or 12 after school snack size...I form them in the bottom of a cheapo pie pan, top and bake completely and put them in zip bags.

Recently my Megan accidentally left the freezer door open. It was a hot day and I noticed it as water was dripping!! AAARGH!! Well it was not as bad as it could have been if I had noticed it later... mostly the veggies on the door and a few items on the top shelf.. I started to throw all the veggies out then realized... gee duh.. they aren’t spoiled just defrosted and mushy... OK what to do... it was mostly broccoli and broccoli carrot cauliflower mixtures. Soooooo how about a soup? Kinda like that yummy broccoli cheddar at McDonald’s...
This is what I created and will definitely make again!!

Broccoli Cheddar Veggie soup

15 cups apx. mixed veggie blends mostly broccoli, carrot, cauliflower
10 cups of water
8 Tblsp. Chicken soup base

cook till very tender and cool...

For our family size, this bagged up 3 Ziploc with 4 cups soup base each

to finish the recipe:

for each 1 cup of base add:
1/2 cup milk
1 Tblsp. cornstarch stirred into about 1/4 cup chicken broth.. (can use water.. just needed something to mix it with and the broth was handy)

stirred till thick and add:
shredded cheddar... to taste.. we like a lot.. there was probably almost a cup LOL...

stir to melt cheese... serve

OH MAN... this is soooooo good... we poured this over rice to stretch it and it was FANTASTIC... and it would be great over baked potatoes too... Yummy... I actually had to share it with the kids!! LOL

you could also use it mixed into rice and baked as a yummy broccoli cheddar rice type side dish...

Tuna Calzones

Well this is another one of those .. I don’t have a recipe but I do this.. kind of recipe....

The absolute YUMMIEST thing to do with tuna is Tuna Cheddar Calzones.. take a pizza crust or Calzone dough roll it into thin rounds about 6” ... I think I cut a 1 pizza recipe in 6 pieces.. (I have not tried it with the garlic pizza dough yet but i bet it would be great) and mix your tuna with shredded cheddar cheese and 1 scoop of mayo just for moisture. mix it up good and put a “Plop” into the center of each dough round.. Fold over, seal the edges with a little egg glue and crimp with a fork. We baked these at 425* for about 15 -18 min.. until brown.. store in a Ziploc in freezer and just heat in the micro when you want a quick hand-held meal!!

BBQ Pork

4 cups cooked roast pork
1 bottle BBQ sauce

cook till it falls apart and serve on bread or buns
about 8 servings

to freeze: either flash freeze individual plops or in meal size portions in ziploc bags or freezer containers. Heat and serve!!

4 cups roast pork
1 cup salsa
couple celery tops

cook till it falls apart and serve as burritos or tacos with refried beans and mexican red rice
about 8 servings

Crunchy Oriental Pork Casserole
from Busy cooks web site

1 c Diced cooked pork roast 1 can Cream of Mushroom Soup
1/4 c Milk 1 t Soy Sauce
1 c Celery, thinly sliced 6 oz Water chestnuts, sliced
1 can Chow Mien Noodles 1/4 c Sliced green onions
2 T Chopped pimiento, opt

Combine soup, milk and soy sauce. Add pork, celery water chestnuts, green onion and pimiento. Fold in 1 cup of chow mien noodles. Spoon into a shallow 1 1/2 qt casserole. Sprinkle with remaining noodles. Bake in a 375 degree oven until thoroughly heated, about 20 minutes.
Serve immediately.

King Ranch Chicken Casserole

Prep Time: 15 Min.
Cook Time: 40 Min.

1 can (10 3/4 ounces) Campbell’s Condensed Cream of Mushroom Soup
3/4 cup Pace Picante Sauce
3/4 cup sour cream
1 tablespoon chili powder
2 medium tomatoes, chopped (about 2 cups)
3 cups cubed cooked chicken or turkey
12 corn tortillas (6-inch), cut into 1-inch pieces
1 cup shredded cheddar cheese (4 ounces)

Directions

1. Mix soup, Picante sauce, sour cream, chili powder, tomatoes and chicken.
2. In 2-quart shallow baking dish arrange half the tortilla pieces. Top with half the chicken mixture. Repeat layers. Sprinkle with cheese.
3. Bake at 350°F. for 40 minutes or until hot. Serve with additional Picante sauce and sour cream. Serves 8.

To freeze: freeze this uncooked. defrost and bake for 40 min.. in a pinch you can micro defrost and nuke to heat but it is not as good...

TIP: For 3 cups cubed cooked chicken, in medium saucepan over medium heat, in 6 cups boiling water, cook 1 1/2 pounds skinless, boneless chicken breasts or thighs, cubed, 5 minutes or until chicken is no longer pink.

Chicken & Broccoli Lasagna

Sauce:
4 tbs. butter
4 tbs. flour
2 c milk
1 c chicken broth
3 eggs
1/2 c parmesan cheese
1/2 tsp. salt
pinch of nutmeg & ground red pepper

lasagna noodles
2 tbs. butter
1 c chopped onion
1 tsp. minced garlic
1 1/2 c diced chicken
1 bag frozen broccoli cuts
1/4 c parsley
1 lb mozzarella, sliced thin
1/4 c parmesan cheese

Sauce: Melt butter, stir in flour. Add milk, whisk until smooth. Stir in broth. Cook, stirring constantly, until thick. Beat eggs in separate bowl, add small amount of sauce; then combine egg mix with all sauce. Stir in cheese and seasonings.

Cook noodles.

Sauté chicken in butter with onion and garlic. Stir in broccoli, cook 5 min. until tender. Add seasonings.

Layer in 9 x 13 pan: sauce, mozzarella, noodles, chicken. Repeat. Finish with cheese. Freeze.

Bake 350 for 50 min, until bubbly.

NOODLE STROGANOFF (original recipe)

1/4 C. BUTTER
1/4 C. CHOPPED ONIONS
1 CLOVE GARLIC MINCED
1/2 LB, FRESH MUSHROOMS SLICED OR 1 2 OZ. CAN
1 LB. LEAN GROUND BEEF
3 TBLSP. BURGUNDY OR RED WINE
3 TBLSP. LEMON JUICE
1 (10.5) CAN CONDENSED CONSOMMÉ - UNDILUTED
1 TSP. SALT
1/4 TSP. PEPPER
1/4 LB MED. NOODLES (2 CUP)
1 C. SOUR CREAM

Sauté mushrooms onions and garlic in butter until lightly browned. Add meat. Cook until red disappears. Stir in burgundy , lemon juice, consume, salt and pepper. Simmer uncovered for 15 min. Stir in noodles cook uncovered
5 min or until noodles are tender. Mix in sour cream, heat quickly, do not boil.

this is how i do it for OAMC..
use a gallon bag and put it in a large measuring cup to support it..

Noodle stroganoff.. **Super easy OAMC instructions...

1 lb (I use 2c.) cooked ground beef seasoned with onion and garlic
1 large can (8 oz) canned mushrooms (if you use fresh sauté them some)
1 can beef broth
3 Tblsp. Lemon Juice
3 Tblsp. red wine
label and freeze..

to serve.. defrost.. add 3 cups noodles ( I add the whole bag but need to add a little liquid) cook till noodles are tender then stir in 1c. sour cream (or more if you have added extra noodles) warm slightly and serve...

My family eats this like madmen!! I have had to continually stretch this with more mushrooms and noodles to get enough for my family.. You can of course lighten this any way you like or use beef soup base or homemade broth if that is your wish..

Recently I found hamburger on sale so I planned out a bulk cooking mostly with that. I pulled together my favorite recipes and went to it!!. Here are some of my favorite hamburger recipes and how I cooked up 35 lb. of ground beef.......
Recipes!

Recipes with raw meat

* Robbyn’s Meatloaf - 6 lb.
* Robbyn’s Basic Meatballs - 5 lb.

Recipes with cooked ground beef:

First make: Pre-Cooked Basic Ground Beef
Package 5 pounds as described below

Use the rest in:

* Noodle Stroganoff - 4 lb.
* Shepherds Pie - 4 lb.
* Beef and Potato Burritos - 2 lb.
* Taco Meat - 5 lb.
* Sloppy Joe’s - 4 lb.

First I make the things that call for raw meat.. the meat loaf and meatballs.
Robbyn’s Meatloaf
I used 6 lb. of ground beef and packaged it in 3 - 2 lb loafs

2 lb gr. beef
1 c. oats
1 egg
1 envelope onion or beefy onion soup mix
1/2 c milk
1 med. size carrot

Blend carrot and milk to pulp. Mix together with all ingredients.

To Freeze.. package in family size portions in zip bags. Label and freeze.

To Serve.. bake 350 * for and hour or till cooked through.

Robbyn’s Basic Meatballs
I have used this recipe for YEARS...

1 lb. ground beef
1/4 cup fine, dry bread or cracker crumbs
1/2 teaspoon salt
1/8 teaspoon pepper
1 small onion, chopped
1 egg
1 tablespoon oil

In medium bowl, combine all ingredients except oil; mix well. Shape into 1 1/2 to 2 inch balls. In large skillet, brown meatballs in hot oil; drain. Add desired sauce to meatballs, cook as directed in recipe.

Tip: To brown in oven, arrange in un-greased shallow baking pan; bake at 400 degrees F for 15 minutes or until browned.

Cocktail Meatballs: Shape into 1 inch balls; continue as directed above. Makes 24 meatballs.

To Freeze.. Flash Freeze and bag together.
To Serve.. Just add to any sauce or recipe as needed

notes...
if you use crackers you don’t need to use salt..
1 sleeve of saltines is one cup of crumbs..
a tablespoon measure slightly heaped makes a nice size meatball..
I bake @ 400 for 20 min.
I use dried onions and they work great.

Pre-Cooked Basic Ground Beef
Next I make the recipes that call for cooked ground beef. I cook my ground beef with garlic and onions. I am a convenience freak, I use the dehydrated onions that I buy in bulk and I use the crushed garlic from a huge jar that I buy at Costco.

When my panful of ground beef is cooked (about 5 lb. at a time) I start making the packages that call for cooked ground beef. First I rinse the fat off in a big colander, then using a Tupperware Quick Shake container, I bag my meat 2 cups at a time. The quick Shake container works great because it is 2 cups and has no handle, so it fits great slipping into a quart size ziploc container. Slip, flip, shake, zip..... very fast and easy.

Ideas to use the Pre-Cooked Basic Ground beef... We use this on pizza for pizza night, in our spaghetti sauce which I can without meat in the summertime, or for hamburger gravy and more. Very versatile to have in the freezer.

2 c ground beef (cooked with onions and garlic)
1 can tomato soup
1 can green beans or corn

To Freeze.. Put in gallon freezer bag and squish together. Label and freeze.

To Serve: Defrost, put in 1.5 - 2 quart casserole dish, top with 6 servings of mashed potatoes and top with a generous amount of grated cheddar (apx. 3/4 c?) Bake at 350 * 30-40 minutes or till hot and bubbly and the cheese is melted.

Optional: In disposable 1.5 quart foil pan, prepare completely to the cheese and freeze. Defrost and bake as above.

Beef and Potato Burritos
After browning ground beef with onions and garlic, measure out 4 cups (apx.. 2 lb). Put in fry pan with about 6-8 med. diced potatoes (I chop small in my food processor). Cook until potatoes are done. I don’t like to add oil, so if it starts to stick I add water. Add salt, pepper and lots more garlic. When potatoes are tender, spoon into tortillas and roll. Flash freeze, wrap in plastic and put in a big zip bag. To heat wrap in a paper towel and microwave...

Taco Meat Seasoning Packets
Makes enough mix for one pound of ground meat

2 t Instant Minced Onion
1 t Salt
1 t Chili Powder
1/2 t Cornstarch
1/2 t Crushed Dried Red Pepper (optional) - way to hot for my family
1/2 t Instant Minced Garlic
1/4 t Dried Oregano
1/2 t Ground Cumin

Combine all ingredients in a small bowl and blend well.

Makes 1 package (about 2 T) of mix. Using the above recipe as a guide you can increase the amounts to make any number of packages.

Taco Filling: Brown 1 lb lean ground beef or turkey in a medium skillet over medium high heat; drain the excess grease. Add 1/2 cup water and the seasoning mix. Reduce heat and simmer 10 minutes, stirring occasionally.
To Freeze.. bag, label, date and freeze..
Makes filling for 8 to 10 tacos.

For a larger quantity - Rip squares of foil for the number you want to make and just portion out the spices on the foil pieces. Fold the spices inside the foil packets and store in cupboard in a container. I use a recycled peanut butter jar. I do make my seasoning packets in quantities larger than 1 lb packets. I usually cook 5 lb. meat at a time and use seasoning for 3 lb. But that is how WE like it.
