I’m capable of cooking my own chili and tacos - it’s a fair sacrifice to make for cleaner streets, English-speaking neighborhoods, and fewer cholos running around showing their twisted, curly-fingered gang signs. It’s the same line of thinking as “we should have picked our own cotton”.
A lot of the families that run those Tucson restaurants have been in town for several generations. (And they make better food than I can make.) Ditto for the Jacome family, who ran an iconic department store, and now include a leading real estate agency.
Yes, there are poor and homeless Mexicans in Arizona and Texas. But there are also Mexican-American cvic leaders, U of A faculty, US veterans, etc. etc.
