Scrambled eggs, leftover fried rice, scrapple, and kimchi for breakfast.
We have one about 2 miles away. Another one is Long John Silvers. Not sure where you get your fine sea food.
Sushi fish is frozen
All pork in US is irradiated
I scrub and wash my produce
Chicken, in the US chlorine rinsed
Beef from the US is safe but all mine is frozen, thawed then blasted at 800 degree.
I don’t eat pets.
I never ever buy or eat organic. I’ll have my food irradiated, vaccinated, feed antibiotics, rinsed in chlorine, processed in plants that clean with chlorine and other harsh chemicals, treated with pesticides and herbicides,treated for fungi and other diseases, and generically engineered to resist all calamities.
So far it seems to have worked. I’m 65 and have never had a parasite or any food borne illness. Except that one time with a really bad oyster and the fermented pineapple.

In Japan, measures like freezing fish at very low temperatures (e.g., -20°C for 7 days or -35°C for 15 hours) are used to kill parasites and make fish safer for raw consumption.
My wife (not Asian) makes Kimchi, I know she doesn’t use rotted anchovies. I guess it’s not real Kimchi, but it sure is good.
You don’t need to use a fish product to make kimchi; and if you do use it, only a tablespoon of fish sauce will do, and you barely know it’s there. It’s there to provide umami.
If you want another option for cooked food on your sushi: cooked eggs, scrambled/omelet style, are another common sushi topping.
We make a thin sort of crepe out of the eggs, and cut it into strips. You can also use the little frozen salad shrimp or pasteurized crab meat. There are lots of ways to do California roll that don’t involve raw fish or even surimi. (I’m not sure how the latter is processed.)
To me, Raw Fish has another name: bait.
I do have a LJS in my town but I’ve never been to it and the online ratings make it out to be a horrible place. I did stop by one in Hannibal, MO a couple years back on a road trip and it was quite decent.
