We don't eat soybeans, number one, but we eat all the others.

In particular, mushrooms, broccoli, and Brussels sprouts are underappreciated.

Mushrooms are incredibly good for you.

For each of the above, be sure to drink what moisture was left behind. Unfortunately, these three all leave really good substances in the water in the pan.

Brussels sprouts are underappreciated.

Brussels Sprouts takes particularly well to lotsa butter.

I eat a lot of frozen vegetables, microwaved in prepackaged bags. I used to drain the water from the bags before eating...but I never considered what was in the water before I read your post...thanks!

I think any oxalates in the veggies end up in the liquid they were cooked in so anyone who has issues with kidney stones may want to consider that.

But cornbread soaked in collards or turnip greens pot liquor was so good.
