Strangely most of the good butchers I know of are men.

But anything is possible I guess

Incidently when I was much younger there was a butcher in the center of town, and there was a giant 2000+ sq ft freezer attached. inside it was full of hundreds of wooden lockers that you could rent. you would buy a cow or a pig or whatever he would cut it up and you would stick it in your locker.

I wonder is there anything like that anymore ?

There is in smaller towns. I have a hog in one (not in a wooden locker but a rolling shelf).

But to be a butcher now takes a lot of money and you have to pay for regular USDA inspections.

A little thing the big boys slipped in to limit old school knock em in the head places.

You can make a deal with a local farmer to get a whole or part pig or cow, he’ll cut it up and plastic wrap it for you, and you can put it in your own freezer.
