I'm surprised that commercial grade fireworks/powder charges can be pitched in a vehicle and driven across country.

They can’t, unless the proper permits are in place, and the vehicle meets certain standards to isolate the cargo from ignition sources, and has the proper placarding.

And I am surprised that commercial fireworks can be transported in a commercial kitchen that has a heat source.

Not to mention the food storage issue of mixing edibles with poisons.
