Best ever Banana (nut) bread.
1 cp Sugar (Splenda for a low cal treat)
1 cp Flour
1 tsp Bkg soda
1/2 tsp Salt
3 Lg super ripe bananas
2 eggs
1/2 cp butter flavored crisco
OPTIONAL: 1 cp total - nuts, raisins, dried cranberries/cherries
1) Mix dry stuff: Sugar, flour, soda, salt.
2) Mix wet stuff: Melt shortening in microwave (about 30seconds). Combine shortening, eggs, and vanilla. Mix well with a fork.
3) Combine 1 & 2 and mix well. **Youll think its too dry but its not.
4) Mash up bananas, stir well with fork and pour into above mix and stir up well.
5) Add 1cup chopped walnuts. Or equivalent of white raisins and dried cranberries. **You can get creative here.
6) Spray non-stick (Pam) a bread pan and pour in mix.
7) Bake at 350deg for exactly 1hour.
8) Let cool (about 45min). Spread cream cheese icing on top for a few hundred extra calories.
**Your house will smell delicious**

1 tsp vanilla or 50:50 vanilla/almond extract
