Why was the train going 106 mph there??

and

Why did it take so long for the engineer to hit the brakes?

Maybe at some point we’ll hear the truth. Hopefully the black box will shed some light.
One guess is that he was occupied with something else besides doing his job.
Maybe reading, watching something on a mobile phone, etc.

Does anyone know how the accelertor woks on these trains? Is it a foot feed
like an auto or a lever that is hand held/set or some other device?

It’s probably the most advanced locomotive made in America. No excuse for him operating the train at that speed unless there was some kind of mechanical malfunction.
