You’re welcome. Tarpon Springs used to be almost all Greeks that worked we spongers. I used to go there all the time to eat, browse the shops and buy sponges. It’s been many years since I have been there and I have no idea what it’s like now.
I wonder if the oil spill damaged the sponging industry. I figured it might so I stocked up on sponges. There is nothing like a shower with a big sea sponge.

This is the Greek salad I grew up with and I never had one that didn’t put potato salad in it. I’m always disappointed when I get what they call a Greek salad yet it has none of the fixings that I’m used to. We make this at home and triple the recipe putting it in a big lasagna pan. We can eat it for dinner, then lunch and dinner again the next night.

Some Cuban bread, a pot of Spanish Bean soup or Caldo Gallego, perfect meal.
