I hear that. I'm ready to leave hi tech and love to cook, but I think about the hectic nature of a commercial kitchen and back away.
Try doing private parties- good $$$ if you can find the right clients. Once you do a few people will be asking for your contact info while you are doing the party they are attending. Many will try to outdo the other party and then it becomes a war and you win in all sides 'cause they keep upping the ante and spending more $$$ to out do the friend.
