This incident strikes me as typical of an older chronic alcoholic with reverse tolerance to alcohol, possibly due to liver damage, slower metabolism, etc.
Chronic alcoholism leads all manner of mental defects in thinking and personality changes that the chronic alcoholic would disavow and be heartily ashamed of when rational and sober.
It is not surprising that a relapsed chronic alcoholic might spew the diatribes heard in childhood even though the well and sober man does not think/believe/act that way.
I think that Mel Gibson is a very ill man whose chronic alcoholism has him on the edge of psychosis.
God help him, because no one else can.

I think you are very astue here. My FIL was a chronic alcoholic who sobered up about 4 yrs before his death. He became a totally different person, actually nice to be around.
Then, he started adding vodka to his morning orange juice, and became the raging a$$hole toxic personality that drove his children away from him in the first place.
