It seems silly to me for American chefs to prepare Chinese food for visitors from China. When I visit another country, I want to sample that country’s quisine. I can enjoy home cooking at home.

Few years ago when I was in Maine lobster was cheaper than hamburger.........probably still is at the wholesale level.
It’s the middle level distributors and restaurants that make a killing on it.......
