A friend of mine had a summer job in high school as an exterminator’s assistant. One regular stop was the local Frito-Lay plant. To this day, 40 years later, he won’t say why... but he has never touched another Frito.

My sister makes “redneck enchilada’s”. basically pan fried hamburger meat with cheese wrapped in tortillas and (Wolf brand) chili poured on top and then baked.

You can add your own spices and peppers when its on your plate.

It is actually very good.

Two comments:

Yes, Wendy’s puts meet from the grill into a small container behind the grill, which is emptied, boiled, and used in chili. In the 1980’s, they also has some potato toppings that used ground beef from the same place. Just because they followed proper procedures doesn’t mean I would eat it. Still won’t.

My economics professor in undergrad worked at Campbell’s before he got his Ph’D. He was specifically responsible for the vegetable grinder that makes V9. Why V9 instead of V8? Because he would use a long 2x4 to push the vegetables through the grinder. As the day progressed, the 2x4 would shrink. I forgot the type of wood they used to enhance flavor, but I know they taste tested various trees. This was in the early 1980’s, so I would not warrant that this process is still used.

The key for successful restaurant eating is what I call the T-ratio. Teeth to tattoos. If the help has more teeth than tatoos, you are less likely to get sick than the opposite.

It’s the cake doughnuts I don’t really like much. When I was a kid we had this donut shop up the street... ah man... nobody made donuts like that guy. When he retired and moved away it was a sad sad time.

We used to show up in the mornings before daybreak to watch them make the donuts and pig-in-a-blankets. They were so soft when fresh it had to lay down in the box. Even later when they weren’t hot they were still the best I ever had.

Soft donuts with a crust of sugar on the outside and the chocolate ones were perfect too. No other place makes donuts like that. I guess for chains Shipley’s is closest but it ain’t close enough.

The church next to the donut shop used to get a lot of Sunday School attendance because they gave a donut to the kids who showed up. The church got a discount.

I still miss those donuts.

I rarely eat out anywhere because of filthy food handlers. You would be surprised how few health inspectors there are. Most restaurants/fast foods have never been inspected in large cities with a resident inspectors. Forget about any inspections being done in small towns or any travel distance from the inspector’s office.

1) In my school days, I worked in a cafe that was filthy. Food stored on the ground. No floor. On the dirt, no refrigeration, screen walls, rodents. The one toilet was stopped up the last 6 mos or more with poo everywhere.

2) Last time I was in a Whataburger, the cook would flip a burger and then dig inside the back of his pants. Deep butt digging. Flip, dig, flip, dig.

3) Was a mystery shopper for Sonic until the waitress with black dirt under her nails. Not just brown ick but black. Reported it to the company and immediately quit.

4) A Mr. Gatti’s Pizza place had the special ed class folding boxes for them. While that’s a nice idea, the hygiene has a lot to be desired. They would also dig in butts and wipe runny noses all the while folding pizza boxes.

5) Co-workers would bring in breakfast tacos from a taco stand run by the nastiest, filthiest people around. Uh, no thanks, I’ll pass.

Sometimes you don’t know if the stories are just stories but one was told to me about the factory that makes those crunchy cheese coated snacks - he said they sweep the cheese powder up and just dump it back in the processor. Don’t know how true that is - China maybe but the US?

Sounds good! Looks like I’m not the only Redneck cook around. Quick and satisfying if you need something spicy.

I really don’t like to eat at the fast foods joints any more since I started cooking at home. I don’t eat at restaurants much except on special occasions. I do eat Asian occasionally since I haven’t mastered the wok yet.

It seems quality and value have declined in order to keep prices low. At home I use fresh good ingredients and know what I am eating. I really try to serve a meat and two vegetables as often as possible but sometimes a one dish meal is all I have time for.

But if people trust the food joints where they eat that is OK. Been there, done that.

Ha! When I first got married (77) I met a girl from Georgia whose dad had a farm with hens.
She told us that Campbells would come thru and give them a “nickel for each dead guinea, and it didn’t matter what them guineas was dead from”
Did not eat canned soup for a long time after that.

I worked at Wendy’s too and actually like the chili. Yeah, it’s the unsold cooked burgers, which is actually a pretty good idea to prevent waste.

I cook at home to save money and to prepare what I want, the way I want it, when I want it. But I do eat out too, and I take my chances. So far, so good.
