I won’t argue. They are a ton of work.

I looked a recipe once and said...not so much!

But I have a good friend that makes them around Christmas...sells them cheap. The potato tamales and the bean, cheese and jalepeno tamales are to die for. I buy enough for all year and freeze them.

Now I have to admit, smuggling cocaine in them is pretty innovative. But not being of a criminal mind...I can understand why I might not think of wasting a perfectly good homemade tamale to smuggle drugs.

All those are great too, but I like food that fights back.

Pork and raisins sounds like it would be sweet...so we probably agree on that type of tamale. :)

The smell of mexican food makes me sick. Refried beans and smoking, rancid vegetable oil. These foods are banned from the house. Peasant food.

Great source for manteca is the butcher counter at the local Mexican market. They’ll sell it to you in little tubs. It’ll be in liquid form and very flavorful — not the hydrogenated stuff.

If this peasant doesn’t get Tex-Mex at least once a week I will go and buy a frozen dinner and douse it with picante.

But you know what they say..different strokes for different folks. :)
