Egyptian? They were in Egypt for a long time and it would have been more natural than the other languages. Odd that slaves were able to read — reading requires time for schooling. If the the tablets were not meant to be read by the masses then maybe a more appropriate or formal language used for religious ceremonies — if there was one — in the same way Latin is used in academics.
I always thought a commercial for the tablet should have used the Mosses story. For example, “You can’t smash this tablet as easily as Moses did...”
God wrote the Ten Commandments, not Moses. He would not have been limited in any way by what Moses knew at the time. If his intent was that the Hebrews would ultimately read and write in Hebrew, why would it make any sense to write the Commandments in a language that would have no future relevance to his people?
I thought Fauci wrote the Ten Commandments?

Given that they had just left Egypt, they probably used the same hieroglyphics that were engraved on the structures they helped to build.
You presume - incorrectly - that the image you describe is 100% accurate, to include the text on the stones.
The correct analysis would be why Moses would carve a replacement set of stones in a language nobody else could decipher and the true geographical origins of the Exodus.
In the end, what a mess those who think, as the picture in my old study Bible shows, create when they create pictures of Moses holding the Ten Commandments with Masoretic Text for the Ten, when God would have etched them with a language the people, like Moses, would understand, which leaves out then at that time Masoretic Text, Aramaic Hebrew, and Paleo Hebrew.
But God then as now uses what is beneficial and expedient to transmit His word in a format people can understans, thus why we have Bibles now in a host of languages and why at one time it went from before Paleo Sianatic to Proto Sinaitic to Paleo H, to Aramaic Hebrew, to the LXX as they were the best, most known, and widely distributed languages at the time people who read God’s word were reading the scriptures in for their time period.

Moses grew up in Egypt. The Jews were in Egypt for generations, as servants/slaves of the Egyptians. They necessarily spoke and wrote Egyptian, whatever else they might have spoken among themselves.
The universe was in fact created out of the Hebrew alphabet. Adam and Eve spoke Hebrew. The first tablets were in ketav 'asshuri and the second in ketav `Ivri.
