The University may have given in, but most North Dakotans haven’t. I sent hoodies with the politically incorrect design to relatives out-of-state, and they love them. I have seen them all over the Western part of the state and the design isn’t going away. I’m working not too far from New Town now, and I have seen them over there, too.
As can be seen from part of my nickname, I love raccoons and have said before it’s weird that you don’t see sports teams named after them (though some may have raccoon mascots)...it could be that it would be “awkward” to have fans chanting Go Coons Go! :)
Sambo’s name came from the founders, SAM Battistone and Newell BOhnett, IIRC. They did try to associate with the old legend of Little Black Sambo, but I think the boy was Indian. Something about a tiger chasing him around a tree and eventually the tiger turns into butter (pancakes, mmm).

Restaurants were renamed “Jolly Tiger” or “No Place Like Sam’s” (apparently there is only one left, in Santa Barbara)

I’ve been there, McGregor, Temple (mostly gone), Alamo, Wildrose, and worked wells near all but Wildrose.
This attack on the Redskins is nothing new.
The same group types/mentalities were all bent out of shape several years ago with a variety of community names they deemed offensive. They were demanding the offending communities change their names and that the map companies reprint all of the maps.
These group types/mentalities make careers out of finding something to be offended at.
If/when they succeed in getting the Redskins name changed, they will go on to some other company or product or community or similar name to be offended by. Notice that these demands for change always come from as few as ONE complaint.
Instead of REDSKINS call them the Washington SCALPHUNTERS!
that should make heads explode since everyone in the OLD WEST was taking SCALPS.

Political Correctness (PC) is ruled by victimhood and the ability to take offense. It is a modern method of forcing mental strait-jackets upon speech and thought. We have had the laughable contretemps (except to the person fired) of the use of the word ‘niggardly’ as in frugal. High dungeon ensued amongst the offended! Same with “black hole” in another place. Some years back the unbelievably talented but IDIOTIC P.E.T.A. crowd went after the New York town of “Fishkill”, achieving its goal for maximum FREE publicity.
The problem with this mindset and personality that is inclined to forcing this PC strait-jacket on their neighbors is that they are never satisfied. There is always something else that OFFENDS THEM. Get rid of the low-hanging fruit and they will keep climbing for more. The key to this is to IGNORE THEM! Difficult for the Redskins in that hot air capital of Washington but as a rule we must not give them the time of day or any satisfaction.
