Yummy. One thing that makes a difference when I eat whitetail is if the fat is left on.
In my humble opinion, it is the fat that gives whitetail meat that extra “gamey” flavor. If it’s trimmed off when butchering or shortly after, it just tastes better—to me.
I eat a lot of venison because I let hunters hunt deer on my land for a payment in meat, and I always trim the fat as soon as I get (unless it is sausage!). The more they bag, the more meat in my freezer.

Here in the Texas Hill Country we had a herd of at least 15 axis occasionally roaming thru our pastures. They browse together like a herd of sheep.
But since the terrible, week-long subfreezing weather w/ ice & snow during Valentine’s week we hadnt seen that big group. I have noticed a few stragglers on occasion.
Axis may be a threat but the biggest threat are the feral hogs that run rampant thru local farms & ranches. They tear up everything & hurt the native wildlife.

Looks like a grown up fawn. I was half expecting to see a swastika or a German cross instead of spots. Or at least a red “meatball”.

It isn't uncommon for an axis to give birth twice in one year, giving them an obvious advantage over native deer species! Nonsense. So do whitetails. As a matter of fact, it also isn't unusual for whitetails to birth twins. I don't see a problem with axis deer. Just hunt them.

Let’s not jump to conclusions. The Nazis weren’t the only Axis power. There was also Japan, Romania, Bulgaria, Hungary, Italy, Finland and Thailand.
