It must be 20 years now since I read (or was it heard) a theory about the explosion of Hellenic civilization about 2500 years ago being due to a diet rich in fat, namely olives and olive oil.

The theory was that all that good, rich fat turned on those Greek brains and resulted in the civilization we still (but for how long) point to as the starting point for the West.

“I’m off to make a ketogenic breakfast lasagna. Low carb, high fat, grain free.”

Note, dietary fat is extremely harmful, causing arteriosclerosis (hardening of the arteries) with high blood pressure and heart attacks, unless you are in the fat burning state of ketosis. To be in a state of ketosis your carbohydrate intake must be limited to a small percentage of your total daily calories, depending on your lean body weight. For persons weighing 200 lbs or more this may typically be less than 20 grams to 30 grams of carbohydrates per day. Pasta and bread typically cause an immune system inflammatory response that raises insulin levels very high even in very small amounts, and insulin blocks the hormones which allow fat to be burned as fuel and blocks the ability of the metabolism to remove fat from the adipose tissues that makes a person fat or obese. The same is true of any protein in meats and fish, because protein in meat, fish, or the body’s own muscles is converted into glucose to be burned as fuel, which blocks the ability of the body to enter into and stay in a state of ketosis and burn fats in the food and off of the body. Consequently, it is necessary for around 70 percent to 85 percent of all your calories to come from fat before you can be in a state of ketosis and the fat to be consumed safely without causing arteriosclerosis and heart disease.

A single Marie Callendar Lasagne serving size of 298 grams has 42 grams of carbohydrate, which may typically be twice the daily allowed carbohydrates necessary to be in a state of ketosis, or just within the 50 gram per day maximum allowance for other people to remain in a minimal state of a 50 gram per day ketogenic diet.

I am not eating carbs. I said it was a ketogenic lasagna. I use thinly sliced ham for “noodles”.

I am well aware that the culprit in heart & vascular disease is carbs. Not fat. Thanks though.
