Simple recipe @ link. NOBODY could bake it like my Mom!

National Pineapple Upside Down Cake Day is observed annually on April 20th. Americans have been enjoying this springtime cake since the early 1900s when many cakes were made in cast iron skillets.

To make a Pineapple Upside Down Cake, line the bottom of a cake pan with pineapple rings. A cherry is then placed in the center of each ring followed by a butter and sugar mixture. Cake batter is then poured over the pineapples and baked.

When the cake is done, it is turned upside down onto a platter before serving, revealing a delightful and delicious masterpiece...

Wel, would you prefer the new reason 4/20 is celebrated? It’s “Stoners Day.”

I’ll stick with Pineapple Upsidedown Cake Day.

Tomorrow, 4/21 is a real holiday. It’s San Jacinto Day. It’s the 182nd anniversary of General Sam Houston’s whipping of the Mexican army and San Jacinto which today is in the Houston Ship Channel east of Houston, Texas.

Absolutely! THAT’S my excuse to go an antique store and buy a cast iron skillet.

I know you can buy them new, but the new ones seem a bit thin. Thinking the older ones are more sturdy?

Get a 10 inch Lodge (tm) cast iron skillet. I use mine for many dishes. Just season the pan well, it will last forever.

Directions for seasoning the pan can be found on line. Just be sure that water and soap never touch it.

Not if it’s made in a cast iron skillet- a plain cake pan just doesn’t give the cake the awesome crispy edges that a skillet does.

Old ones are much smoother than new ones and are usually thinner, which is most desirable; in spite of the thinness the iron is of a higher quality.

If you must get a new one make sure to choose an American made one, they are just better, whereas the Chinese ones can have hidden flaws.

You can wash them with water, just put the pan in the still hot over afterwards and the water will evaporate completely. Then oil lightly before storing with some bacon grease or veg oil.

I’d love to, but I’m going gangbusters in ‘18 with serious dietary changes — no caffeine, no dairy, no alcohol, no sugar, very low carbs, no gluten. About 16 pounds have come off so far. Ive allowed myself two slices of pizza and three glasses of wine in almost four months.
