Mentioned here that Indian and Mexican seem to have an affinity. Perhaps it's the inventive use of vegetables, and the love of hot stuff.

Then there's the Japanese embrace of Italian food. Japanese love Italian food---see many high end Italian restaurants in Japan these days. And if you catch the cooking segments of NHK--the Japanese cable channel---you'll see Japanese chefs making Italian dishes.

This recipe seems to embrace several cuisines.

THAI CHILI PASTA / PEANUT SAUCE

SAUCE Mix cup smooth p/butter, 1/4 cup soy sauce, 3 tea chili paste, 2 tb br/sugar, 2 juiced limes, 1/2 cup hot water, minced gar/cl, tea ea rice vinegar, ground ginger, 1/2 tea sesame oil.

ASSEMBLY Layer on dinner plate cooked thin spaghetti (or use fave pasta), cooked chicken, blanched carrot slivers, chp water chestnuts, chp cilantro. Pour sauce over; toss to coat.

SERVE topped with cilantro and chopped peanuts; bean sprouts.

I like the fact that so many of the flatbread recipes work out well with whole wheat flour.

Happy Easter, Liz, and All.

Does anyone know about Easter Lilies? Aldi had big potted ones for just 3.99 today, and I got one. I’m wondering if you can handle it like an Amaryllis, so that it will come back next year? I don’t have a place to put it in the ground. I got one that hasn’t opened yet.

That is indeed convenient, but I’m guilty of “approximating” ingredients because of availability. By the time the place I’ve moved to becomes civilized and quits rolling the sidewalks in at 6:00 P.M., I’ve relocated to the middle of nowhere again.

These are incredibly skilled people who are very kind and generous with their extensive knowledge and experience. Some of them are the kung fu equivalent of grandmasters, and you can see it in the images they post!

I hope everyone had a Happy Easter!
I’m not a fan of indian food, so here’s a cookie recipe:

Chocolate Chip Cookies with a Nordic Twist

Ingredients
7/8 cup (124 grams) all-purpose flour
¾ teaspoon kosher salt
½ teaspoon baking soda
1 cup rye flour (140 grams)
12 Tablespoons (1-1/2 sticks) salted butter, cut into pieces and chilled
1-1/4 cups white sugar (248 grams)
2 large eggs
1 Tablespoon Dan Sukker Tumma Siirappi, Finnish Dark Syrup (or molasses)
1 Tablespoon vanilla extract
1 package (10 ounces) Dark Chocolate Morsels (or about 1-1/2 cups chopped bittersweet chocolate)
1 cup pecans, toasted and chopped (113 grams)

Instructions
Heat oven to 350 degrees with the rack in the middle position. Line 2 baking sheets with parchment.
In a medium bowl, whisk together the all-purpose flour, salt, and baking soda.
In a 12-inch skillet over medium-high heat, toast the rye flour until fragrant and shade or two darker, about 5-7 minutes, stirring frequently. Remove the skillet from the heat, then add the butter and stir until melted.
In a large bowl, mix together the sugar, eggs, dark syrup (or molasses) and vanilla. When the rye-butter mixture is cool to the touch, slowly stir it into the eggs. Add the dry ingredients and stir until combined. Stir in the chocolate chips and pecans.
Drop by 2 Tablespoon mounds of dough about 2-inches apart on the prepared baking sheets. One sheet at a time, bake until the edges are firm and the centers are soft, about 8-12 minutes, rotating the sheet halfway through. Cool on the sheet for 5 minutes then transfer to a wire rack to cool. Repeat with second sheet. Makes 24 cookies.

One of the flowers opened today - beautiful! I’ve always loved the Amaryllis at Christmas, but this is my first Easter Lily.
