We can thank the Dutch for more than windmills and tulips. The English word “cookie” is derived from the Dutch word “koekie” meaning little cake.

There have been cookie-like hard wafers in existence for as long as baking has been documented. This is because they traveled well however, they were usually not sweet enough to be considered cookies by modern day standards.

The origin of the cookie appears to begin in Persia in the 7th century, soon after the use of sugar became common in the region. They were then spread to Europe through the Muslim conquest of Spain. Cookies were common in all levels of society throughout Europe by the 14th century, from the royal cuisine to the street vendors.

You can get chocolate chip cookies for $0.25 all week at Whole Foods Market. Bring a friend — there's a limit of three per person.

Quick, easy, and delicious. Featured on a local TV news program.

NO BAKE BUTTERFINGER BARS

METHOD Heat/melt on low 2 c crunchy p/butter, cup ea sugar, corn syrup.
Stir in 6 c crushed cornflakes. Pat into 9x13 buttered pan spread w/ thin
layer melted/solidified choco/chips. Spread 12 oz melted choc/chips on top.
Cool to solidify chocolate.

My Mom used to belong to a cookie club where each member baked 12 dozen of her favorite cookies (it was a mess baking 12 doz.) but the reward was after the exchange meeting each member took home a dozen of each variety of cookie and my sister and I were able to pig out for weeks on them.

This unique confection by Cordon Bleu Chefs can be found in Le Petit
Larousse du Chocolat – Collector’s Edition.
I'm sharing this exquisite recipe
only w/ 5-star chefs. Stunning chocolate caramel-coated chestnuts,
extremely simple to make, impress guests at festive seasonal parties.

Le Cordon Bleu Chocolate caramel-coated chestnuts / makes 12

METHOD day before; drain 12 whole tinned chestnuts in syrup over bowl.
Next day: Straighten 12 paper clips, leaving hook at one end. Insert straight part into drained chestnuts.

Cook to 114 Celsius 250 g sugar, 60 ml water and 50 g honey.
Offheat add 50 g dk chp chocolate gradually; stir smooth.
Position a rack 20 cm above parchmented sheetpan.

FINAL Dip chestnuts into chocolate caramel; hook them
onto rack to dry about 15 min til cold; caramel will drip
forming a fanciful tail.
