Insects, blood and faeces may not sound particularly appetising, but they are among the produce we should consider eating if we want our food to be sustainable and healthy, according to a team of chefs and scientists in Denmark.

While the prospect may sound appalling, similar techniques are already being harnessed. Caterpillar faeces is fermented and used to flavour rice in Japan, says Flore, and kopi lowak, which is digested by the civet, is the most expensive coffee in the world.
At the moment, gastronomy that is high-quality and sustainable is only available for people who are in the position to buy luxury produce. We want good food available for everyone. That is our main goal.

Oh, god. I lived in the Philippines for a few years...the smell of those baluts was nauseating.
I remember when I first smelled a really ripe one and involuntarily spit out something like “Oh my God. People eat those things?” and feeling instantaneously nauseous...LOL, kind of like I am feeling now just thinking about it.
I give the Scots lots of creativity points with haggis, but...I can’t think of anything about baluts that makes me laugh, other than the concept of drunk young sailors daring each other to eat one, then watching him immediately barf over a rail...
As Man leaves Earth and goes Offworld, there are those who insist that all sorts, rich and poor, educated and uneducated, hetero-fertile and homosexual, should voyage to the “new world”.
