Nordic Food Lab wants you to eat blood, insects, brains and faeces to save the world

Insects, blood and faeces may not sound particularly appetising, but they are among the produce we should consider eating if we want our food to be sustainable and healthy, according to a team of chefs and scientists in Denmark.

“We try to work with every type of produce. Insects, blood, jelly fish, fermented products that sometimes smell and develop mould, and the products look rotten,” explains Roberto Flore, Head of Culinary Research and Development at the lab. “It’s about giving people more confidence with different produce and reconnecting with process of producing food."

Currently, researchers are working on how to make edible insects – from ants to larvae – more appetising to the uninitiated.

Other experiments have explored how animal blood, and its coagulating properties, could be used as an egg substitute as intolerance to the kitchen staple is one of the most common among child in Europe.

Its members never shy of controversy, one recently argued in a Munchies article that faeces should be explored as a source of food. After all, young elephants, hippos, koalas, rabbits and pandas eat their mother’s faeces to introduce useful microbes into their digestive systems. And evidence shows that a diverse microbiome in the gut is vital for our health.

While the prospect may sound appalling, similar techniques are already being harnessed. Caterpillar faeces is fermented and used to flavour rice in Japan, says Flore, and kopi lowak, which is digested by the civet, is the most expensive coffee in the world.

“At the moment, gastronomy that is high-quality and sustainable is only available for people who are in the position to buy luxury produce. We want good food available for everyone. That is our main goal.”

How about we just completely wipe out the third world? I mean, it’s a matter of survival isn’t it? We could just stop feeding them or transferring tech.

Africa has millions of acres of land that could feed the whole continent. Corruption and ignorance make it nearly impossible to develop. Many farms and irrigation projects lie abandoned and unproductive. Look at Cuba and Venezeuala starving in agricultural paradises. Look at CA suffering from politically created drought.
The world will not starve from overpopulation but political ignorance.

You’re not going to find a more efficient, natural process for converting plant matter into protein than a cow. See, cows don’t really eat plants. A couple of their “stomachs” are really bacteria farms. And those bacteria specialize in converting inedible plant matter into protein and simpler carbs. It’s those bacteria that cows eat... and the cows in turn are amazingly efficient in turning that food into body mass... almost 50%!
