I'm going to a festival Saturday at which I will purchase fresh, preservative-free apple cider. I'd like to brew a five gallon batch. I've found a few interesting recipes, but I'd like info from the best people on the inner webs! Do you have a recipe you'd like to share?

Apple cider (usually) ferments nicely from wild, airborne yeast, unlike beer. Strange but true. Grapes have yeast on the skin (ever notice that “blush” on fresh grapes?) and also doesn’t require pitching yeast.
Adding a packaged yeast cuts down the possibility of a bad batch but isn’t required. Maybe this is why hard cider was the beverage of choice in colonial times. (Plus the fact that their untreated water wasn’t safe.)
I forgot honey was like an antibiotic. I think I’ll stick with my regular recipe maybe try Stevia in a few bottles to experiment.
5 O’Clock vodka, cider, to taste.
