You usually just need to reduce all the ingredients proportionally and possibly reduce the cooking time a bit if it’s a baked dish. I only follow any recipe exactly the first time or two in any case. Most recipes with garlic and spice use amounts that are for pu$$ies :-)

The big red squeeze bottles of Chinese hot sauce are a lot less expensive to use and don’t have the vinegary taste of Tabasco. Just heat! Sriracha is my best friend in the kitchen!
Combine with an egg, some breadcrumbs and 1/3 of a can of French onion soup. Make into patties and brown both sides in a skillet. Combine remaining soup with 1/2 tsp of mustard powder and 2T of worcheshire sauce and 2T ketchup. Pour over patties, reduce heat and cover until cooked.
When in doubt... throw it out. Go pick up some fresh Ground Round.

Take the meat, put it in a casserole dish. Mix in tomatoe sauce. Cover with layer shredded mixed cheese. Take crossant rolls, roll flat, spread cream cheese on them then re roll them and place in top. Bake in oven till rolls are golden.
You will thank me.

My mom used to make the same thing...she called it Poor Man’s Stroganoff. She served it on rice or egg noodles.
My dad was opinionated about eating the same thing more than once in a week...basically he wouldn’t want 2 Italian dishes in a week, etc.
So my mom got very creative with hamburger, since there were a lot of us and she had to make that lb of hamburger go a long way.
She would also make a white sauce, and add ground beef that had been fried with lots of diced celery and onion. She called it “Creamed Hamburger”, served it over rice...and it was very tasty. She’d do the same thing with hard boiled eggs. Make a white sauce, add the whites of the boiled eggs to the sauce, serve it on toast points, and crumble the egg yolks on the top. Another very tasty meal. She’d use hamburger, rice and canned tomato mixture for stuffed peppers, and even for cabbage rolls. She was very creative with hamburger
P.S. I’m “old” :) so when I was a kid, it was before the taco and Tex-mex food was introduced, at least in our neck of the woods. First time I ever had a taco was when I was in college.
Go online to some of the cooking magazines sites and do a search on “cooking for two”. For example, I did this at www.tasteofhome.com and came up with 2,775 recipies. You can then further refine your search by course, ingredient, etc.
Also, just about any recipie can be scaled up or down. If the recipie says serves 6 divide ingedients by 3 to serve 2. If you want to serve 12, multiply by 2. In some cases you may have to guesstimate a bit.

I like the SOS suggestion! Made a great filling breakfast when I was in the Marines.
At that time, chipped beef was a lot less expensive than today (plus you got to keep the glass container which was a juice glass), so once in a while I would load up the white sauce with chipped beef and boiled eggs cut into slices about 1/8 inch thick, and served it with toast when times were hard for us. I guess that is what they called S.O.S.
I've got a few self-made recipes for one-man meals now, but it's hard to make nice meals for one that only makes a small amount.

You can make a cream sauce -equal parts fat and flour and add milk until it is as thick as you need. Then add seasonings that you like, cheese, onions and the hamburger. Other veggies like peppers, broccoli or corn work well. Mix together with or just pour over buttered noodles, rice or potatoes.
Pasta bakes are a good option. I have made a Philly bake, pizza bakes, and my favorite is my ravioli bake. For that I use frozen cheese ravioli, meat sauce, cottage cheese with some cream cheese - also grate cheese into this and add seasonings - then I layer like lasagna using a lot of cheese. I usually use muenster instead of mozzarella.
If you have some salsa mix that in and serve over rice or noodles. Can add things like corn and black beans. Add cheese and other toppings like onions.
Taco salad or Frito pie. Or loose meat sandwiches with pickles, onions, ketchup, mustard and cheese.
Hamburger stew. Make a gravy, add mixed veggies and the hamburger. Can eat over mashed potatoes, toast or with biscuits /cornbread. Will admit not a favorite because I hate peas and lima beans that might be in the veg mix.
Not a fan of canned soups (used to love mushroom but started making my own) and whack-a-dough has a metallic taste to me but there is a lot of recipes that use them and they are easy to keep on hand.

Its all good.
Fry a couple strips of bacon...will flavor your meat as well...which if 93%... that lean is pretty much flavorless unless it’s Natural grass fed etc.
