Ducks are all dark meat. No white meat. One of the best meals I ever had was prepared by a little old Pennsylvania Dutch lady....Roast duck & Sauerkraut with whipped potatoes and trimmings.
Roast duck w/ plum sauce, the specialty of a local upscale restaurant here, near Harrisburg, PA is superb.
From a cooking standpoint, trying to cook duck "like" chicken is probably a losing proposition. Duck has a much higher fat/meat ratio than chicken, and the *usual* methods of cooking duck respect this difference. As an example, the Latin dish pollo asado. If the same cut of duck were cooked in this way (baked, then broiled), the dish would almost surely end up very, very greasy.
Of course, just as you can roast a chicken, you can roast a duck. Different temps, different distance from flame, longer cooking time for duck.
