We don't have to, you've been shown beyond a reasonable doubt that the first texts where Hebrew. Let's review:
The Hebrews despised anything Greek and would not have allowed Greek texts inside their Holly places.
We have witness testimony that the original texts were indeed written in the Hebrew as listed upstream.
Thousands and thousands of Hebrew texts (likely many original Hebrew texts) were burned by the church, as evidenced by E-S above.
After the crucifixion, common sense would dictate the Pharisees would launch a campaign to destroy any written record of Yeshua's teachings.
Basing your theory on a few fragments of Greek texts, that everything documented was documented ONLY in the Greek language, is a ludicrous assumption.

There are not, of course, a "few fragments," but thousands, in whole or in part, discovered all over the known world. The Greek New Testament is better attested by at least an order of magnitude than any other ancient work.
A hypothetical original Hebrew New Testament, on the other hand, is attested by nothing but assumptions and suppositions by people who clearly have no clue about the science of textual criticism.

At any rate, I find it plausible that there were Hebrew versions of the NT books, some of them original. It interesting but we have inherited a history where almost the entire world has been usings translations based on the Greek text. God has allowed the other manuscripts to be lost, destroyed, or forgotten, or hidden perhaps. It is interesting to ponder how a translation could be improved or corrected, and perhaps edifying and enlightening. It is hardly reasonable to insist on any doctrinal change without the manuscripts and, even so, uncharted territory to assert that the Gospel has not been preserved in an unbroken chain from the Jewish Apostles. We must be very cautious, as there have been so many denominations, sects, cults, and heresies that have arisen over the centuries.
