Got any leftover sweet potato's?
Mash them and put them in a buttered baking dish, cover them with this topping.
1 cup brown sugar, 1/3 cup butter, 1 cup chopped pecans, 1/3 cup flour
Mix sugar and flour together, sprinkle over potato's, pour melted butter over it and cover with nuts. Bake 350 for 35 minutes. Yummy.

Thanks for all the great recipes. Here's one I like.
Swiss Turkey-Ham Bake
In a skillet cook 1/2 cup chopped onion in 2 Tbsp butter til tender but not brown. Blend in 3 Tbsp flour, l/2 tsp salt, 1/3 tsp pepper.
Add either 1 can sliced mushrooms, (or substitute fresh), 1 cup half & half, 2 Tbsp dry sherry, cook til thick and bubbly.
Add 2 cups cubed cooked turkey, 1 cup cubed cooked ham, and 1 5-oz can drained sliced water chestnuts.
Top with 1/2 cup shredded swiss cheese, (and bread crumbs if desired.)
Bake 400 appx 25 minutes

Thanksgiving Weather Report
Thanksgiving rush, we have received an early weather report from our in-house weather reporters. Turkeys will thaw in the morning, then warm in the oven to an afternoon high near 190ºF. The kitchen will turn hot and humid, and if you bother the cook, be ready for a severe squall or cold shoulder. During the late afternoon and evening, the cold front of a knife will slice through the turkey, causing an accumulation of one to two inches on plates. Mashed potatoes will drift across one side while cranberry sauce creates slippery spots on the other. Please pass the gravy. A weight watch and indigestion warning have been issued for the entire area, with increased stuffiness around the beltway. During the evening, the turkey will diminish and taper off to leftovers, dropping to a low of 34ºF in the refrigerator. Looking ahead to Friday and Saturday, high pressure to eat sandwiches will be established. Flurries of leftovers can be expected both days with a 50 percent chance of scattered soup late in the day. We expect a warming trend where soup develops. By early next week, eating pressure will be low as the only wish left will be the bone.

Got any leftover sweet potato's?The sweet stuff don't get eaten in our house, not even by the kids...so this recipe is just what I needed....if we don't eat this, I swear NO MORE SWEET POTATOES...LOL I'll feed the leftover, of the leftovers to the neighbors cat...I hate the %$*&%* he thinks my potted herbs are his catbox...Hurmpht LOL

Have Bones, Make BrothFreeze it or use to make more gravy for other leftover dishes..It's easy as 1 2 3
- Turkey scrapes and all bones from leftover turkey
- 2 coarsely chopped carrots
- 1 celery rib with leaves, chopped
- 1 onion chopped
- 1 clove of minced garlic
- 1/4 cup chopped parsley with stems
- 1 teaspoon peppercorns
- 1 bay leaf
- Water or canned chicken broth (if you are short on bones)
1) Chop or break up turkey bones and place in a large pot.
2) Add remaining ingredients and cover with 2 quarts water or canned chicken or combination of the two.
3) Bring to a boil, then reduce to simmer and cook, skimming for 2 hours. Strain and boil down to one quart.

Thanksgiving Turkey and Black Beans Wrap It Up!
- 2 tablespoons olive oil
- 2 cups chopped, leftover turkey
- 2 green bell peppers, cut into 1/2 inch diced (about 2 cups)
- 2 cloves garlic, minced
- 3 teaspoons dried oregano
- 2 teaspoons ground cumin
- 1 10-ounce can tomatoes with green chiles
- 1 15 ounce can black beans, rinsed
- 3 tablespoons red wine vinegar
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 12 flour tortillas
1. In a large saucepan, heat oil over medium heat. Add bell peppers, garlic, oregano and cumin; cook, stirring, until pepper softens, about 5 minutes.
2. Add tomatoes, beans and vinegar; cook, stirring occasionally until thickened, about 25 minutes.
3. Meanwhile, heat one tablespoon olive oil in a skillet; add turkey and sprinkle with chili powder. Heat and stir for about 5 minutes. Cover and set aside.
4. With back of spoon, coarsely mash some of the beans. Taste and season with salt and pepper, if desired.
5. Heat tortillas in a dry skillet or microwave. Spoon bean filing onto tortillas and layer with seasoned turkey. Wrap and serve.
Makes 6 servings.

WestCoast Good Moring...My wife just reminded me that the fishermen will be setting their Dungeness Crab pots here n the waters off Humboldt Bay next week, weather and price conditions allowing. There could be an abundance of them bringing the price down a little.
I found our first Porcini (Boletus Edulis)mushroom yesterday. It is a robust young specimen waiting for your instructions.

Fennel, Tangerine, and Dungeness Crab Salad
- 1 lb fresh picked Dungeness crab meat
- 8 Satsuma tangerines
- 1 small fennel bulb, with leaves if possible
- 1/2 c. extra virgin olive oil*
- 1 head Treviso radicchio or 2 heads Belgian endive
- Sea salt and fresh ground black pepper to taste
1) Peel and break Satsumas into sections.
2) Cut fennel bulb in half from top to bottom. Lay flat side down on cutting board and slice paper thin from top
to bottom. Chop 2 T. fennel leaves coarsely. Reserve 1/4 cup olive oil.
3) Fold rest of ingredients gently, except Treviso. Lay out leaves on eight plates; place salad on leaves. Drizzle remaining
olive oil over salad and garnish with sprigs of fennel leaves.
You will love this Northern Italian goodie....Yummmmmm ..LOL
