Saltpeter is sodium nitrate, NaNO3. It's not very toxic; LD50 something like 1.7 g/kg in humans. Sodium nitrite, NaNO2, is about 20x more toxic; LD50 about 70 mg/kg. In small doses, it's used as a food preservative and isn't very harmful. In larger doses, it wrecks the hemoglobin in blood and your cells suffocate.
