Forgot to mention that I had 5 stents implanted in 3 of 4 arteries in my heart, 14 ERCP Ops total between York Hospital and PSU-Hershey Medical Ctr & Hospital. The Pseudo-cyst on my pancreas was the size of a grapefruit, and had to be drained from the stomach, with 4 drains during the ERCP Ops. The GI Team at Hershey was fantastic and saved my life.

Had a double meat with cheese Whataburger and fries with gravy every morning for a year living in RoundRock, TX. Got up to 230. That was breakfast. Skipped lunch. Had supper every night at a Tex Mex joint. Got real big real fast.
After that, went warrior diet. Back down to 170. Been that way for 20 years or so. Cook my own food now. Feel much better these days.
I have an endocrine disorder.
If I want migranes, insomnia, joint swelling to the point of wracking pain, and alternating boughts of vomiting and diarrhea, I can eat prepackaged or canned foods.
If I want to actually make it through the day without all that, I eat food the way God made it, organic.
Sunday breakfast at my house consists of 2 lbs. of bacon, fresh melons, homemade blueberry scones, and breakfast potatoes.
Lightly coat bottom a large-bottom skillet with extra virgin olive oil
Add in 2 lbs. of cubed potatoes
Add in 1 cubed red pepper, 3 cubed fresh Jalapenos, and one diced onion
Add salt and pepper.
Cut a stick of fresh butter into 1 teaspoon sections and dot around the top.
Cover and put on medium heat for 5 minutes.
Remove cover, stir, reduce heat to low, cover again for another 15 minutes.
Test. If fork goes through the potatoes easily and the edges are browning, it’s done. If not, give it another stir and cook 5 minutes.
The Jalapenos really give it a kick.
That sounds good.
I would add some shredded cheddar cheese.
