Judy, how would you compare the non-GMO, farm raised lamb to the GMO lamb? Is it more tough to chew?

I love the idea of non-GMO meats, bought a whole bunch of pork products from an organic farmer here, and may as well have tossed the money spent in the garbage can.

All of it was so tough to chew, we ended up with a few chews and spitting it out. Bacon, pork chops, ham steaks, country-style ribs, etc. I even crocked potted the heck out of it for so many hours, and still so tough it hurt my jaw.

Maybe this is not the norm, but it sure put me off. Now, non-GMO chicken from Publix is tasty and wonderful!

My former fiancé’s mother was Greek. All of us went to a Greek restaurant from time to time. I didn’t know that the Greek’s made them with cabbage. The Dolmathis I’ve had were made with grape leaves (which would take a lot more time b/c they’re smaller) and I think some were made with lamb (I make mine with ground round and a little ground pork). I don’t have the exact recipe from my family (great grandmother, grandmother, mom, various aunts), but I had my mom walk me through making them one time years ago and I kinda work with that and perhaps fudge a little. They didn’t have very many recipes written down.

Forgot to add to my other response to you - I like your idea - I’m going to try that as it sure would be much simpler! The other benefit - my sister and I like cabbage (we were raised on it) but my nephew isn’t such a big fan. He likes what’s inside the rolls (meat and rice) and the “juice” they’re cooked in, but not the cabbage (he always removes that). The way you do it means everyone could take what they liked :-)

Oh, that’s too bad. You definitely got a tough old animal, by the sound of it.

My daughter has chicken, duck, lamb and I get pork from a neighbour of theirs. I’ve never experienced anything but tender, tasteful meat. Their neighbour also raises pastured, naturally fed beef. The first time I tasted the pot roast, I said, “Oh my goodness. I remember this flavour! It’s what beef used to taste like.”

The only product I didn’t care for was their steak. I found they cut them too thin and there wasn’t that much meat on them. They weren’t tough, but just not as good as the steak I like, which is the tenderloin from Costco.

I know, they sure didn’t write specific measurements down. I’m smiling now as I remember going through my mom’s recipe box and seeing how she wrote some of her recipes. Very different from how today’s recipes are written!

Yes, my mom would first boil/steam the whole head of cabbage in water until the leaves were soft and easily separated. Then, one by one, took each cabbage leaf and wrapped her meat mixture in it.

I use the gr beef and gr pork combo as well. I use ground chuck. My husband ends up putting hot sauce on it and says it’s great. Of course, he’s a Southerner and loves hot sauce on most everything : )

The original dolmathis was made from grape leaves, yes. But they are more expensive than cabbage, and we would have to make a special trip to the Greek store to get them. Cabbage is so much easier and the leaves are tender too, although I really loved eating those little grape leaf/rice appetizers my mom used to make for special dinners.

Ah, the memories....You have some lovely memories, and I love reading about them when you post them.

Have met three locals Trump supporter that are not twenty yet just yesterday. Two are dealing with democrat elders in their family.

BTW BIL just got back from a business trip. He drove from Michigan through Ohio into Pennsylvania. He says its a forest of Trump signs.

Talked to a couple of employees in PA. They say that the only way ILLary will take PA is to cheat and there were many who had signed up as poll watchers. They just were not going to let it happen

Also with masters and additional hours. Bachelor in area major in music (6 year degree). and minor in psychology and theater Just one course short of minor in math. Masters in Music Education
