I know how to make a killer salad to go with the fish. It makes you want to drink cold things. Pineapple, lettuce, cucumbers, little tomatoes, chives, radishes, grapes and green pepper slices. Cheap Italian seasoning and a dash of powdered red pepper and olive oil. Mix and chill. Your friends will think about you in the morning:)

I had a roommate who was a diver and several times ate maybe 3 hour old Halibut which was just knockout delicious. The reason I made the comparison is my presumption that Chilean Sea Bass would have to be frozen for US consumption. All those you mentioned are great eating, probably Yellowfin Tuna & Mahi Mahi being my favorites.
