I should amend my comment, then. I believe in a God who is capable of anything, including creating all that we see in six days. He spoke, and it came into being. But I also believe that between verse 1 and 2 of Genesis 1, there could have been billions of years. Elsewhere in scripture there are brief references to a war in heaven, with angels who rebelled against God being cast down. It is possible that the casting of Satan and his demons down to earth ravaged the planet and probably a good section of our galactic neighborhood, and that what we see in v. 2 and beyond is a "re-creation," of sorts, with the plants, animals, and humans being placed on earth in the span of six day, even some 6,000 years ago, and God's Spirit now keeping demons in check so that they can't wreck complete havoc. It's possible, and it doesn't contradict a literal reading of Genesis.

The point is, not all the detail is given in Genesis, but while there were no "scientists" around then to observe and refute the Genesis narrative, we do have a written record handed down by oral tradition until Moses put it in writing, hence I will side with the written narrative as opposed to evolutionary speculation.

To which I have physical proof: I used to belong to Second Baptist in Houston, Tx (great church). Doctor Ed Young (an Excellent pastor)once cleared up a mystery for me during a sermon. I had inherited a 250 year old Lutheran Psalm book in which were numerous woodcuts (etchings). I recognized all the pictures but one was confusing: a man who appeared to be Moses with two tablets in his hand but depicted wearing horns on his head! One day Doctor Young explained that an early mistranslation in the first German bibles of the word for radiant (when Moses came down the mountain from seeing God he was radiant) was mis-translated in the first ever German bibles to the word "horned" due to a similarity in the Latin or Greek words. Thus my early German book showed Moses coming down from the mountain with "horns" on his head! You can imagine the confused Germans pondering the unknowable mind of God, when realy it is the very fallible mind of MAN messing up HIS work.....
