sturgeon fish can be done all kinds of ways, but not over cooked/baked/barbacued. As is turns white, the taste is near the craving comparison like lobster...... many beer batter them and lightly fry them in pieces, or bake them. Just depends... Fish tacos I hear of halibut and sturgeon or stripper...and they say the receipe from the fishsniffers is oooo oooo yummy. Just reminding me to go to it and look it up.. I had some scallops pieces, and frankly I couldn't have much of them, too rich for my tummy...... ;o) Sturgeon if fresh, has no fishy taste, very tender, and mouth watery... Of course to some.... heehee..
